It's one of my dad's specialties.

The layers of fat intermingled with lean meat is so very tasty. The sauce is a combination of savory and sweet, neither overpowers the other, both complement each other, yet remain distinct. The addition of vegetable hearts (choy sum) provides a crunchy texture and milder flavors to counterbalance the tenderness and stronger flavor of the pork itself.

This combination of different flavors, mouth-feel and textures is a classic example of balance in Chinese cooking.

My new avatar is a cold platter. It's basically various cold meats, seafood and vegetables sliced and arranged like artwork. Carrots and turnips are commonly used, as they are easy to carve and very durable.

This one is a phoenix. My father is particularly skilled at making these cold platters. My personal favorite is his Dragon vs. Phoenix, with lobster-meat for the Dragon and chicken for the Phoenix. His manual dexterity and artwork has always impressed me. It's a craft that I would like to someday develop.
