Share your favorite recipes of things to throw on the grill here. I will be having a houseguest for a few weeks soon and plan to do lots of grilling out, on account of a) my oven doesn't work and b) it's SUMMERTIME!!!! :coolsun:

Here's my favorite thing to do with veggies on the grill:

Wash and slice (in preferred shape/size) the following:

Bell peppers (green, red, yellow)
Zuchinni
Summer Squash
Portobella mushrooms

Mix up marinade as follows:

1 whole bottle Italian dressing (Newman's is good for this)
1/2 bottle red wine and garlic vinegar
1/2 bottle balsamic vinaigrette (Girard's my fave for this)
Coupla splashes of red wine
Big fat spoonful minced garlic

Place veggies in large (quart-size) Ziploc bag and pour in the marinade. Zip up and lie flat in the 'fridge for at least a couple hours.

Throw on grill for just a few minutes (when the meat, fish or poulty is almost done) and serve immediately, lightly salted if desired.

Sweet corn, fresh from the farm, still in the husks, roasted right on the hot charcoal grill. You know it's done when all sides are yellowed and burnt. Peel off the burned outer layers, peel back the unburned husk layers, slather on some butter and a sprinkle with salt and pepper. Paraphrasing Andy Griffith: "Mmm-Mmmm, goooood! T'aint nuthin' better'n corn-on-the-cob, 'cep'n a slice of warrenly's home-made apple pie."

Anyone done pizza on the grill?

I like this on ribs, but the person who makes it for me refuses to reveal the recipe. I found a basic watermelon bbq sauce recipe online but suggest you add chopped jalapenos to taste, the sweet/spicy combination is to die for!

6 lbs. seedless watermelon - rind removed
8 oz. tomato paste
1 Tbls. onion powder
1 Tbls. garlic powder
2 cups packed brown sugar
1/2 cup sherry
2 tsp. lemon juice
1 tsp. liquid smoke


-Cut the melon into pieces and place in a saucepan.
-Cook uncovered over medium heat, stirring occasionally, until the melon is the consistency of applesauce (approximately 2-3 hours).
-Add remaining ingredients.
-Simmer uncovered over low heat for 2 hours.
-Allow to cool to room temperature before using.

warrenly - corn on the bbq is indeed divine. I prefer the sweet white to the yellow kind personally but will gobble down either quite happily.

Lady - DAMN that sounds good. I would definitely add the chopped jalapenos... can never get enough jalapenos. I will plan to try that one.

You should add jalapenos to your list of veggies to grill! Nothing better than grilled hot peppers!

EGGPLANT. Mmmmm, yummy beautiful eggplant, sliced and briefly marinated in olive oil and garlic and then flang on the grill until crispy and served with plain yogurt thinned with lemon juice and chopped mint. I LOVE eggplant but hate cooking it, except on the grill.

My evil neighbors just returned our grill, after having held it captive for many a month. I know what's for dinner.

I have not, but Jeffrey Steingarten writes about grilling pizza in his excellent book "It Must Have Been Something I Ate". Pretty funny essay. I'm amazed he managed to survive all his experiments.

Oh yes, the grilled eggplant is truly delicious. Don't forget to salt it and drain it after the slicing but before the marinating.

I've always salted eggplant, but recently heard a compelling scientifical-like argument against the efficacy of salting re: bitterness, so I stopped and honestly have never noticed the difference.

I still salt it if I'm cooking it in chunks instead of thin slices, because I'm paranoid about that wretched undercooked-eggplant bitterness, but I don't know if that makes any difference either.

I have indeed. With a roasted eggplant caviar spread and fresh mozzarella on top. It tasted as close to wood-burning oven baked as you can get without actually having a wood-burning oven.

The only difficulty I had was in laying the pizza out on the grill. It really, really wants to droop into the slats and you think you're doomed; but then, like magic, it cooks and the drooping stops. A very satisfying and fun cooking experience indeed. :)

Hmmm... Wonder if I have that roasted eggplant caviar recipe somewhere.

I've read that too about the salting/bitterness issue, but I actually have another reason for doing it religiously. Specifically, unsalted eggplant makes me mouth feel funny. I don't know what it is, but it literally makes my gums and the inside of my cheeks feel numb. Go figyah. :dunno2:

I once did a London Broil with BBQ sauce, and lucked out, it came out perfect. My usual bit is chicken tenders or legs and spicy italian sausage in a BBQ sauce with lots of spice in it.

Shark can be really good grilled, though I've never been successful at cooking it right. We've only ever overdone it. As with all fish, grill it for a shorter time than you think is necessary! There are several good recipes for marinade, but a marinade isn't even necessary if you cook it right!

I had a Maco (?) shark filet once, caught by my grandfather, that was almost heartbreakingly tender and succulent.... with no marinade, just a dash of salt and generous squeeze of juice from a fresh lemon.

Shark is delicious. Unfortunately it is also overfished and kind of irresponsible to eat these days. Wait awhile, then the yumm0rz.

I actually prefer almost everything that people make in a grill to be made in a little grill type oven thing. :shrug:

Steak would be my favorite.
