View Full Version : I Strangled a Priest Last Night

I went to dinner at a fabulous little Italian restaurant and had "strozzapreti" with sweet sausage. Strozza = strangle. Preti = priests.

They're these long ribbons of pasta lightly twisted by hand to give them a really different, uneven texture. Great mouth feel and great design for sauce absorption with a long pasta.

I'd had them before as a kid a hundred years ago, but it's the first time I've seen them in the States. :vibes:

In all seriousness, this type of pasta looks very interesting. I love learning about different types of pasta. Most of my experience, until recently, has been limited to spaghetti, linguini, fetuccine and elbow macaroni. And to be honest, I never gave much thought to how different shapes of pasta dramatically affect how a dish is experienced.

This enjoyment goes beyond just how the dish tastes, but even how it looks and how its named. For example, I love orechiette, which (if I'm not mistaken) is named like "little ears" or something. That's just too cool.

Not quite. Strozzapreti is actually the word for the tool one uses to perform the act, not a description of the act itself. So technically the title should have been "I ate a priest-strangler last night" but it really doesn't flow as well as the one I chose.

It's a fascinating field of study, really. I'm especially interested in the endless variety of shapes that can be achieved with fresh pasta. Dried pasta probably gives you more intricate options because they have fancy machines to make it, but the fresh stuff is much more challenging to manipulate.

It was a tomato sauce with homemade sweet Italian sausage and fresh parsley. Totally dreamy.

Is the difference related to how tightly wound the twists are or in which direction?

Naw, they're all strozzapreti. There are lots of different stories about how they got their name. I think it's probably just a bit of leftover anti-clerical sentiment from the former Papal states, as in "eat this and die, priest."
