hi there! this is my first time on freethought-forum.com, and i was wondering if anyone could help me out....i'm in culinary school and have to do a report on hoisin sauce......i am having such a hard time finding information that is more in depth than a definition or a recipe! i'm looking for history and culture info, and i'm getting chinese, cantonese, etc....which do i go with?
i also need background info on how/when/why/etc. the sauce was brought about....can anyone help me, whether with information or websites or books, etc? i'd appreciate it!!

Here (http://www.fengshuitours.com/SFC/Fsoyfoods421.asp) is an article about soy based products from China including hoisin sauce. Try doing a google search on the history of hoisin. It brings up alot of links which may be helpful.

I have this book at home, Thousand Recipe Chinese Cookbook (http://www.amazon.com/exec/obidos/tg/detail/-/0671509934/qid=1110915768/sr=8-1/ref=pd_csp_1/104-9641724-1223107?v=glance&s=books&n=507846).
It is a wonderful resource for Chinese cooking, it provides some historical and cultural information. It is elegantly illustrated and entertaining to read even if you never go near a wok.
I'll look up the section on hoisin sauce and post about it tomorrow. Despite being Chinese, I know very little about this sauce other than the fact that I enjoy it on top of Chinese broccolli.
There are also a couple of posters here who are culinary experts. I'm sure they can provide more information.

Interesting. I wonder if that's what they put on the Chinese broccolli at the dim sum place. I was under the impression it was oyster sauce, but whatever it is I love it.

You know what? You're right.
Hoisin sauce is that stuff they use in Peking Duck, which I don't really care for.

You know what? You're right.
Hoisin sauce is that stuff they use in Peking Duck, which I don't really care for.
I'm glad, 'cause I went out and bought a bottle of oyster sauce last year to try to replicate the experience, and I intend to just as soon as I remember to find an Asian market and get some Chinese broccoli. :D
