Just use the and tags same as the bold or italic tags, except do sign=mad (or one of the other options) to change the smilie. For example, sign=santa produces:

Okay, the keywords are in their respective signs in my OP (except for "mad" which I forgot until vm made a big deal about it). Also, there's a list in the header of the sign code entry (http://www.freethought-forum.com/forum/misc.php?do=bbcode#sign) in the vB code document. Under "Sign" but over "Usage" there's a row of white text that says: Optional values: cool, crowd, grin, head, love, santa, smile, smug, sob, stare, and wink. Those are your guys.

You can't pick a smilie from the gallery, I'm afraid. Only the ones specifically dedicated as signs will work and that's an automatic thing based on which keyword you use.
