This is cut from my LJ, because I think it deserves its own forum thread.
WHY IS IT SO IMPOSSIBLE TO TELL WHAT THE FUCK IS IN SUSHI!!?? Okay, apart from Inari sushi, the fillings evade me completely. And maybe it's just the shit at uni, but everytime I buy one, it's like Russian Roulette. Last time I think I may have ended up with pickled eel, though it could have been badly-done teriyaki pork, or some sort of weird tofu or vegetable or shitake mushrooms or something. Or something else completely, because it was just kind of stringy brown shit. This time I ordered what I thought was teriyaki chicken, though I have a feeling she may have given me tuna, because it was a creamy colour and really flaky and mushy, if it was chicken. However, it didn't taste fishy, so maybe it was chicken. Still, TERIYAKI CHICKEN SHOULD IN NO WAY EVER RESEMBLE TUNA. I think I'll just stick to Inari from now on. All delicious and sweet and probably bad for me but it makes my fingers smell nice afterwards.

You know, I can't say I've ever had a hard time determining what is in sushi. Maybe I'm too trusting, but it's always seemed to pretty much match what I've ordered.

I am inclined to believe that this is your problem.
I would stay the hell away from cafeteria sushi. If you want raw fish, go to a dedicated sushi restaurant. Some are quite cheap and unscary. Another tip: never sit at the bar, or the chefs will invariably inflict their most complicated, weird and expensive creations on you. Get a table and order off the menu.
Mystery sushi can be avoided if you only order a'la carte nigiri -- sushi joints always explain what critters are involved on the menu. I try not to order the gimmicky rolls and suchlike; they're more likely to be uncomfortably confusing.
I LURVE sushi. Especially hamachi and sake nigiri. Am too flippin' poor for it these days tho.

I know what ya mean, but then I usually order a Matsu combo that comes with pretty standard fair sushi and sashimi, so I'm rarely faced with having to figure out what it is.
Dim sum rocks too, which I only learned about recently. I've tried the crazy stuff like chicken feet, cow stomach, monkey nutsack, etc. but now I usually stick with the gai long (sp? - chinese broccolli), shu mai (sp? - dumplings with various meat stuffings), steamed pork spareribs, shrimp balls, etc.

While I can understand monkeys having nutsacks large enough to eat, I wasn't even aware that shrimp had balls. Must take a lot to be filling

Seriously though I hate to think of all those poor castrated monkeys running around. It would be more efficient to eat dog and cat balls since their owners routinely have this done.

I've never encountered any sushi (and, by definition, sashimi) that involved cooked tuna. Of course, I'm sure I don't know every kind of sushi there is, though. I don't think it's possible to mistake raw tuna for cooked chicken and vice versa. Cooked versions of both, maybe. But if the tuna is cooked, I doubt it's really sushi and it's certainly not sashimi.

Agreed. It's funny. I like sushi, and I like cooked tuna, but the idea of cooked tuna sushi seems kinda squicky to me.
I do know that eel is always cooked before it's turned into sushi. (Mmmm. Unagi.) Maybe that's what the mystery substance was; it doesn't taste very fishy and has a pretty solid texture.
