does anyone have a recipe for dilly beans? they are pickled string beans that are delicious in salads, for snacking & bloody marys?

Nope, sorry. Never heard of 'em.

Here's one (http://www.cooks.com/rec/view/0,172,150180-254202,00.html) I found through Google. Looks good. :1thumbup:

DILLY BEANS

2 lb. trimmed green beans
4 heads dill
4 cloves garlic
1 tsp. cayenne pepper
2 1/2 c. vinegar
2 1/2 c. water
1/4 c. canning salt

Pack beans lengthwise into hot jars, leaving 1/4 inch head space. To each pint add 1/4 teaspoon cayenne pepper, 1 clove garlic and 1 head dill.

Combine remaining ingredients and bring to boil. Pour hot liquid over beans, leaving 1/4 inch headspace. Remove air bubbles. Process pints and quarts 10 minutes in boiling water bath. Yield 4 pints.

I'd never heard of them either. Do you actually put them in Bloody Marys, or did you mean they're good to munch on while you drink one?

Didn't know the name, but I've had them as something I fished out of a Bloody Mary. Very good, I think I'm stealing this recipe.

Dilly beans are great with Bloody Marys but they're also good with sandwiches or on veggie trays. Try them in a three bean salad. I used to help a neighbor friend make them 15-20 years ago. She was meticulous about removing the string and not using the larger, tougher beans. The recipe vm posted is similar, as are most of the other recipes I saw online; they always use either cayenne or fresh whole red chilies to spice them up. :stringbean: :)

What is canning salt? is it a coarse salt like kosher?

Canning/pickling salt is just like table salt but it is not iodized nor does it contain anti-caking agents. :)

Aha! I came across one of these in a Bloody Mary, in an airport somewhere (can't remember where for the life of me :doh: ). I'd never seen such a thing - celery or dill pickle slices are the usual accompanying garnish from what I'd seen til then - but it was good!

If one had just a handful or two of fresh stringbeans, one could try this cheat method that works well but isn't as good as the real thing. Blanch the cleaned and trimmed beans for 5 minutes, then give them a cold water bath to stop the cooking process. Add a 1/2 tsp of cayenne to the brine of a nearly empty (of pickles) jar of your favorite dill pickles, then add the blanched beans. Refrigerate for two weeks before using, giving the jar a shake a few times. :)

i'm glad you guys know about these crunchy critters, they are delicious, although the ones a relative makes does not have pepper of any kind in them. it is a family thing as the women get together and have their dilly beans in bloody marys. they really are a tasty treat anytime. they can be bought on-line at many specialty food stores, but homemade are the best. i will not be preparing them, a good friend will make them. :chomp:
