Now that it's getting cooler, I've been thinking about my crock pot recipes. And as a new twist, I've started eating meat again after not wanting it for about ten years or so. Despite that, periodically I would still sear roasts-- beef or pork-- for a couple of minutes on each side and toss it in the crock pot with various veggies and herbs for the kiddos. I've got these chicken breasts, defrosting properly in the 'fridge but I'm always a bit leery about slow cooking chicken. Does anyone have any information about safely cooking meats in the crock pot? Or any recipes to share?

Rene posted a pulled pork recipe here (http://www.freethought-forum.com/forum/showthread.php?p=10638&postcount=15), and she generally sure seems to know her way around a crockpot. I have my dad's Boston Baked Beans recipe somewhere, but the only meat in it is sliced hotdogs and bacon chunks.

Chicken is dee-lish (and safe) in a crockpot. Just throw chicken breasts in the slow cooker, top with a mixture of cream of chicken and cream of celery soups. Cook 4 to 6 hours on high; 8 to 10 hours on low.
High calorie but very comforting. Sometimes I make mashed taters to go with it; the stuff makes its own gravy. :eat:

My favorite crock pot meal is roast with red gravy. I don't really have a recipe, but you take a roast, toss it in the crock pot and cover it with tomato juice. I add onion, garlic and oregano to taste. Cook until the meat falls apart (I usually start it in the morning and have it for dinner, cooking on low heat; cooking time, of course, depends on the size of the roast). Remove the meat, add a bit of flour to the remaining gravy, and serve over meat.
I also do just basic chicken and noodles (or tuna and noodles), or chicken and rice, or chili in a crockpot too. Mmmmm, slow-cooked crockpot chili....
