I made a sufferin' succotash pie.

I stir fried a mixture of sweet corn with lima beans, kidney beans, haricot beans, diced potato, and chopped onions. Then I put it in a casserole dish with some gravy stock, added a pastry top and baked it in the oven till the crust was golden.

Not really a "pie" by my definition as the pastry didn't go underneath and around the filling - I was worried that it would get too soggy from the filling.

Anyway, it was delicious. I may try try pre-baking an empty "pie" next time, then adding the filling and putting a pre-baked top over it with a little milk or similar around the edges to act as glue - then putting it back in the oven for a few minutes to weld the top onto the pie.
