Re: What's for Dinner?
Last night for friends dinner, I made falafel and imam bayildi (stuffed roasted eggplant) with rice and tzatziki, which is probably more work than I needed to do (especially since I also had to make the yogurt--what was I thinking?) So Matlock had to step in and cook a bunch of the falafel for me because I was so tired.
But I just had some of the leftovers for lunch, and we really nailed it. Just probably no more making all those things at the same time again.
