Rub a little EVOO on a flat tray and put in the fish, trying to cover the dish. Then get a bunch of breadcrumbs, which you heavily season with fresh rosemary, dried basil and fresh thyme, as well as a little pepper and salt. Cover the fish with it, and then sprinkle with olive oil to make sure your crust goes crispy. Then you dot the surface with small pieces of garlic (you can leave this out if you do not like roasted garlic), cherry tomatoes and black olives. Bake in the over for 20-30 minutes, and serve with some boiled baby potatoes and green beans with chilli, lemon and butter.

Ideal meal for when you want something nice, but cannot be bothered to do a lot of cooking. You can sort this whole meal out in about half an hour and still produce something that looks and sounds hella swanky.
