Yeah, but the vast majority of the time that I use mayonnaise, my whole point is to make something that takes literally less time and effort than getting in the car and buying a drive through hamburger. A sandwich or a single deviled egg (cold leftover asparagus + a deviled egg is the best).
I get that it's not too difficult, and I would totally do it if I were making some big thing, but my mayonnaise use cases are almost always the sort of thing where an extra two minutes or another dirty dish would be a dealkiller.
