I like to buy loose assam tea and add my own chai ingredients. I occasionally make the traditional stuff with cardamom pods and cloves. My current favorite is assam with bits of guajillo and arbol chilies, dark chocolate (the 90% cacao stuff), and cinnamon.
Reminds me. I need to make up a batch of loose chai to take to work next week!
