If your crock was the same size as the chicken (and with a curved bottom), it would take very little liquid to cover it. Then as mentioned the bird's own juices would supplement the soup.

We often do lamb in coke and red wine in this way.

Okay, I just did almost exactly that. I couldn't find plain mushroom soup at the store, oddly, so I got mushroom with roasted garlic added. Hence I only used four or five peeled cloves. I have to leave for work in an hour, but if you happen upon this thread before then should I put it on low or high? Anyone else know?

Hmm... Miss Shelby said low cooks in 8-9 hours, high in 4-5 hours, but I'll be wanting to eat in 7 hours. :laugh:

ETA: Okay, the book says 4-6 hours for high, and I'll be home in 6 hours. So it shall be written, etc. etc. etc.

I found that the chicken cooked much quicker than I expected it to. The second time I did chicken, I cut it up and cooked it on low for about 5-6 hours & it was fine.

I had three immediate thoughts when I walked in after work today, in this order:

1. Wow, someone's cooking something that smells really good!
2. Nobody has been here since I left. What the...?
3. Chicken in the slow cooker! Hell yeah!

It was falling off the bone tender and delicious. I stupidly opted to make mashed potatoes to go with it, though, so I had to wait another 20-30 minutes before I could eat. Maybe I should've thrown some diced potatoes in there with the chicken or something...

Anyway, thanks freemonkey. :)

Wow! That's huge! While you're at it, you might want to get this cookbook. I've borrowed it from the library and its very nice.

It has told me to go get a nice 1.5 or 2 qt. crockpot so I can have nice hot cooked cereal when I get up in the morning.

I'm trying chicken again today. Once again I skinned the chicken and left it whole, but this time I threw in about three diced potatoes, a chopped up stalk of celery, carrot, a small onion, about 6 cloves of garlic and a can of chicken broth, and I'm cooking it on low.

It turned out pretty good. Everything was cooked perfectly, it was just a bit flavorless. I added some salt and rosemary about 30 minutes before it finished cooking but I think it was too little, too late. It could've used more salt and other seasonings, I'm just not sure what...

I made chili in the crockpot today, recipe courtesy of Betty Crocker. It was a little watery and not very spicy. Here's what the recipe called for and what I did, tweak to suit you:

Family Favorite Chili

2 lbs. ground beef
1 14oz can tomato sauce
1 28oz can diced tomatoes (undrained)
1 large onion, diced (a cup)
2 cloves of garlic (chopped fine)
2 Tbl chili powder
1.5 tsp cumin
1/2 tsp salt
1/2 tsp pepper
1 15oz can beans (kidney or pinto - rinsed and drained)

1. In a 12" skillet, brown the hamburger, then drain it.
2. Put the meat in the crockpot along with all the other ingredients, sans beans
3. Cook on low 6-8 hours
4. Add the beans, cook on high 20-30 minutes

Yum.

Now, as I said it was a bit watery and not very spicy for me - this despite the fact that I used 4 cloves of garlic and added a large pinch of red pepper flakes near the end. I think the chili powder I used might be old, but in any case I probably could've added 1/2 tsp of cayenne. I only cooked it for 6 hours before adding the beans, so that might explain the watery.

Anyway, it was pretty good.

That sounds like a really easy to customize recipe, vm. I might try it Sunday.

I made "Salsa Chicken" the other day. It was amazingly simple.

Here's what I did:

2 large skinless, boneless chicken breasts. They were really huge, you could 4 or 6 regular size ones.
1+ cup hot salsa
juice of 1 large lime
chili powder
jalapeno slices (optional)

place the chicken in the cooker, pour the salsa on top. Cook on high until cooked through (about 3-3.5 hours).

Mix the lime juice, chili powder & other spices and stir into the juice in the cooker. Cook for another 15-30 minutes.

I served it with beans, yellow rice, tortillas, cheese, green onions & sour cream.

I was instructed by Target (or was it K-Mart?) to get this one. It cost less that $25 there.

I also just ordered this little one for making breakfasts, dips and smaller meals.

Glad to hear the crock pot experience is turning out good for you, vm and thanks for posting a chili recipe. I like to try different kinds of chili recipes, here is mine.. (Miss Shelby's Ghetto Chili)

I pkg Carroll Shelby chili powder chili mix kit.

1-1.5 or whatever amount cooked ground beef, with onion and green pepper to taste and cooked with the seasoning from 1 package of Carroll Shelby chili mix. It's a little bag that has chili powder, a hot spice, and some yellow shit in it.

I jug of V-8 vegetable juice (low sodium)

1-2 large cans of spiced to whatever taste chili beans. (the variety these days it outlandish)

water, as much as you like

tomato if that's your thing put in how much you like, tomatoes aren't my thing in chili.


Combine all ingredients in Crock pot... on high for a few hours, right before you're ready to serve add the yellow shit that comes in the package. I have no idea what this stuff is, but it gives the chili a nice thick texture, and it tastes real good. After you've mixed it in, let it stay in the crock pot about 15-20 more minutes.... Mix it in very well though because it has a tendancy to clump. I have never tried the hot spice that comes in the kit (for want of a better word) and I don't know when you'd throw that in if you were inclined to use it.
