Hmm, I don't know if I've ever seen cranberries as anything other than garnish or a sauce. In the link I provided, there's a recipe which uses the pickled cranberries with braised greens.
I've tried that before, it was very delish.

I've seen them in juice and jam, and have heard rumblings of cranberries on salads, although I suspect that's a myth.

The pickled cranberries would work great in a salad, though usually the ones I have had in salads are dried.
I urge you to try the pickled stuff, it's not a waste since the buggers last for months. Fair warning, they stain like a motherfuck.

What about cranberry muffins? I imagine you'd need to halve them and perhaps sweeten them before adding, but I'll bet they'd be delish.

I know this isn't exactly a recipe for fresh cranberries, but a local sub shop has a most delicious sammich the call The Bobbie. It is Thanksgiving on a bun! (Sorry, liv, but it does have mayo. )

Anytime I wonder "is there a smilie for that", I am not oft treated to the "No, there isn't." The muffin pile made my tummy do flips. Now I want to stuff my faec (sic) with muffins, or almost as good drink some muffin flavored milk. And who in their right mind can deny the muffin pile? A bigger grinch I could not imagine. :shakeantimuffinites:

Actually I was thinking of getting a bunch of fresh cranberries this weekend and making cranberrry sauce to can. I put it on turkey sandwiches too and sometimes as a sauce with chicken. It goes well with pork too. I've also mixed it with plain yogurt. There's a good cranberry sauce recipe in the holiday recipes thread.

Makes 16
* 2 cups cranberries, picked over and coarsely chopped
* 1 1/4 cups sugar
* 1/2 tsp. grated nutmeg
* 2 cups unbleached white flour
* 1 Tbs. baking powder
* 1/2 tsp. salt
* 1 large egg
* 1/2 stick ( 1/4 cup) unsalted butter
* 1 cup low-fat milk
Directions
1. Preheat oven to 400°F. Grease 16 standard-size muffin pan cups. In medium saucepan, combine cranberries, 1 cup of sugar and nutmeg and cook over medium-high heat, stirring, until sugar is dissolved. Cook mixture 5 minutes. Remove pan from heat.
2. In large bowl, mix flour, baking powder, and remaining 1/4 cup sugar. In small bowl, mix egg, butter and milk and stir mixture into dry ingredients just until evenly blended.
3. Divide half the batter among prepared muffin cups. Top with cranberry mixture, then cover with remaining batter. Bake until golden, 20 to 25 minutes. Let muffins cool in pan on wire rack for 5 minutes, then remove from pan to rack to cool completely.

I do love muffins and was sorely tempted, but I don't have muffin cups and in my experience, without muffin cups you end up with muffin crumbles rather than muffins.
What I ended up doing was a combination of Rev Dahlia's idiot-proof recipe and Yb's muffins. I made the cranberry and sugar spooge like in the muffin recipe, only I used 1/2 cup of sugar and cinammon.
Then I made the batter from Rev's recipe only with vanilla instead of almond extract, less butter, less sugar and a splash milk like in the muffin recipe. I poured half of it into a 9" pie plate, daubed cranberry spooge gently all over, then poured the remaining half of the batter over the cranberry layer. Baked at 350 for 40 minutes.
I was hoping for an even layer of cranberry filling, like a cranberry Newton, but the buggers shifted in baking so they were everywhere.
I am gnoshing upon it warm from the oven even as I type. Needless to say, it's scrumptiously delicious.
