I generally stick in the medium-rare to medium range for burgers. For steaks it's always medium-rare.

There is quite a bit of variation in what you'll get depending on where you order it. I noticed that in North Carolina, they are a bit overzealous, so you should err on the less done side. That is, a medium-rare burger in NC will often be what I'd get if I ordered medium in Pittsburgh. So when I'm in NC I always order medium-rare.

I don't really like to get things rare though, unless I'm having something like carpaccio or kitfo.

I too avoided sprouts for years because of dingbats that boiled them relentlessly, leaving flavorless husks of things that should have been great.

After rediscovering them, my favorite thing to do is lightly steam them to about half-done, then sear them the rest of the way in a pan with some smoked sea salt, black pepper and throw in a bit of minced garlic. It's absolutely wonderful.

These days my very favorite home cooked meal is ribeye steak, brussels sprouts and simple garlic toast, and while I'm probably nowhere near the greatest cook, these are three things I've mastered. *rubs full stomach* Yup.

So Sunday, Mabel came over to watch Twin Peaks, and I wanted to rewatch it, but first we went out to go get some Hawaiian barbecue so that we would not starve to death. So she's driving, and I see a li'l saucer sized turtle walking down the sidewalk (tortoise, probably, but come on). So we circle the block looking for it, then park along a side street and walk up and down that sidewalk trying to find it before it walks out onto the street or just falls off the curb. We looked and looked but never found it, and by the time we'd done that circling and parking, we weren't positive which block it was on or anything because it's a suburban neighborhood and everything looks the same.

We looked for a pretty long time, but eventually we had to give up, and we went to the barbecue place to get our food, and by that time I was really hungry, so while we were waiting for our order, we went into the Mexican grocery next door to it and got some panaderia. And the lady at the barbecue gave us some popcorn chicken for free, which was really good and which I ate most of in the car on the way back. We were gone for almost three hours, then came back with all this food but not hungry anymore.

But then we watched four or five episodes of Twin Peaks, and then she went back home and watched the entire rest of the series so far, but she's coming over tonight and rewatching the rest anyway, and I am going to make eggplant and feta pizza and some buffalo wings, and we are going to try really hard not to accidentally end up doing some big dumb thing instead.

What. It's my favorite dinner and the steaks were on sale for six bucks a pound :P

Speaking of stuff in the freezer, my pork chops are thawed now. Time to use up the last of my brown sugar and cake these fuckers up in some cayenne, smoked sea salt, garlic powder and ground smoked paprika. When they come out of the oven I'm gonna squeeze on half a lemon and destroy these motherfuckers.

...and because I'm too lazy to do sides right now I'll be microwaving some frozen mac & cheese. Because it takes five minutes and I don't have to give a shit :P

Getting home at 11 means doing something stupid/easy. Welcome to steamed green beans night! I fucking love this steamer thing, it's a little metal shell with holes in it that sits 3/4 of an inch above the bottom of my pot and just lets the steam in. This shit is SO EASY. Throw in some minced garlic and kosher salt, then throw on some black pepper when it's done. Melt on some butter. If you really want to go hard, fry up like 4 strips of bacon like I'm about to do, and instead of butter you can throw them into the leftover bacon grease for a quick little fry (about 1 minute tops) and they're fucking wonderful.

My mom didn't raise an Arkansas boy that don't know how to cook, yo. I'm a bad motherfucker.

I want my meat thoroughly and completely cooked. If I see any pink, I am not comfortable consuming it at all. If I see blood, I am definitely handing the steak back to the waiter / waitress and asking for a steak that's actually cooked.

On the nightmare issue, I think it's more the fact that I've never really had intense dreams. My dreams, for the most part are entirely forgettable affairs. I'm almost certainly an outlier considering I'm middle aged.
