I've used almond flour to make faux biscuits before and while they came out delicious, I'd be concerned that it wouldn't retain moisture in a meatloaf the way bread crumbs do. Still, it's a handy sub for low carbers.

Last night, I decided to make salmon for dinner night, with roasted potatoes and a big salad with a bunch of stuff in it. Almost everyone who comes to those was coming, so I figured I'd better get a LOOOOOT of salmon because who doesn't love salmon?

Turns out just about everyone but me, and the blush will no doubt be off that rose in short order, because I have a lot of leftover salmon I have to get through all on my own.

I ate the most barfworthy food possible, Wolf brand chili with canned beef added. I would gag myself so I could regurgitate this stomach unsettling slop if I didn't have to taste it again on the way back out.

I made chicken soup last night, simple one - carrots, celery, onions, chicken, stock. Going to make fresh noodles to order - so they don't get soggy. :ramen:

Tonight we had Kebobs at my daughters house, my granddaughter got a little upset when I said we were eating Dinosaur meat (chicken). I tried to explain that chickens evolved from Dinosaurs and according to the latest ideas, are still Dinosaurs.

I made chicken groundnut stew last night that turned out really good. (Chopped garlic, peppers, and ginger, diced chicken thighs, then add chicken stock and natural peanut butter, diced waxy yellow potatoes or sweet potatoes, and add chopped curly mustard greens, plus be adding salt and black pepper as you go along.)

It's too hot to cook tonight, though, so we can have leftovers and cheese sandwiches and whatever else is lying around.

I have always had spotty luck with falafel, but I'd really like to be able to make it for my Tuesday night dinners sometimes, but also I have to make it without flour because one of the people who comes doesn't eat gluten, so I tried this method* last night, and it turned out pretty good.

* Not the to the letter recipe, because following recipes exactly is bad luck.

I made dolmades with Turkish grape leaves (much to mother's horror) that I found at a halal market. They were the best jarred grape leaves I've ever had. Thin veins, very few torn or unusably small ones, no bitterness whatsoever. Far better than the usual brands you find that use Napa leaves.

I stuffed them with a mixture of ground lamb (also halal) and ground sirloin, powdered ginger, garlic powder, ground cumin, ground turmeric, fresh minced parlsey, fresh minced mint, sauteed onions, lemon juice and lemon zest. It came out really good, like Lebanese, Indian and Greek food had a hot threesome and we got to eat the 65 delicious offspring that resulted from their union.

All that rolling was a gigantic pain in the ass, though, so I won't be doing it again any time soon.
