I went to my sister's house with my brother and we had one of these thingies on the table:
and we fried up fish and giant prawns and some meats and mushrooms and potatoes and even spinach. It was yummy and we ate till we couldn't eat no mo'.

I prepared Christmas dinner for my folks, since my mom just got out of the hospital, and my dad needs to pamper her, so I thought I'd just prepare the meal and serve it, allow them both to relax on Christmas. I was planning on photographing it, unfortunately, totally forgot that I was going to do that. Anyway, we had baked stuffed chicken breasts, stuffed with smoked mozzarella and spinach and toasted pine nuts and garlic, all served on a bed of wild and brown rice. With fresh asparagus in lemon/butter sauce, and another side of acorn squash with apple/brown sugar glaze. Dessert was a pecan pie. Which, I'm afraid, I burnt a bit. They seemed to like it.

Tonight for the first time I used the rice cooker Santa Potato sent me and made the best brown rice pilaf I've ever made. I'm not exaggerating. It was fantastically delicious.
I chopped half a big onion and sauteed it in a splash of olive oil for a couple of minutes. I added a cup of rice and stirred it all up just until the grains were glossy, then threw it into the rice cooker. I added two cups of chicken broth, covered the cooker and pushed the little button.
45 minutes later, it switched itself to keep warm and I let it sit like that for another 20 minutes while I puttered about.
When I removed the lid and stirred the contents, I was horrified to find that the underside was brown. I realized, though, that it smelled too delicious to be burned, and the brown wasn't crusty or hardened at all.
Turns out, the brownness was a result of the onions from the bottom layer of rice having caramelized. This never happens on the stove. I'm guessing the centrality and closeness of the heating element caused this pilaf miracle.
Add to that the flawless, evenly-cooked, light, fluffy rice -- no easy task with brown rice -- and I am completely converted to this little cooker.

But I'm not sure you'd like my (admittedly fairly good) boring old tofu.
However, if we added our meals together, with some chuan jiao peppers, I could make some ma po tofu and brocoli. That would be good.

I cooked up something nice for dinner, but I've no idea if it has a name. I made it up as I went along, but it seems so simple that it must have been done many times before...
Serves 2 (or one if you're greedy).
1 medium onion
2 medium carrots
3 smallish potatoes or one large one
small knob of butter
dash of salt & pepper
1 standard can of spaghetti in tomato sauce.
Peel the onion, potato(es) and carrots, chop/slice them all to about 1/4 inch thick.
Chuck all the prepared vegetables, plus the butter into a frying pan. Lightly sprinkle with a small amount of salt and pepper. Cook on a medium hob with frequent stirring till the potatoes begin to go very slightly brown. Test that the potatoes are sufficiently cooked by test-eating some chunks (though they still should be on the firm side). Should take about 5~10 minutes.
Empty the can of spaghetti over the cooked vegetables in the frying pan and stir. Cook for another minute or so to make sure the spaghetti and its sauce are hot.
Serve. I ate it from the frying pan to save on washing up!

I saw Rachael Ray make this Butter Bean Salad on 30 Minute Meals so I gave it a shot and it was good. To go with it I had the weird idea to make a wrap stuffed with guacamole and Aidell's Mango & Jalapeno sausage which was not as good, but not bad.
Butter Bean Salad
In a small bowl, whisk:
1 clove garlic (salt and smash with flat of the knife to make a paste)
1 lemon
olive oil
cumin
hot sauce
add:
diced cuke
diced red pepper
diced red onion
chopped fresh parsley
rinsed/dried butter beans
Mix well.

Last night: my new favorite summer salad (I may have already posted this in summers past, but I think it's slightly different this year):
2 persian cucumbers, sliced in rounds
15 (or so) grape or cherry tomatoes sliced in halves
1/2 small (or 1/4 large) red onion
1 large handful fresh basil leaves torn into teensy pieces
3 tablespoons (drained) Trader Joe's Perlini mozzarella balls
1 tablespoon craisins or other dried fruit
Toss with balsamic vinaigrette and garnish with TJ's (or homemade) spicy candied pecans.
For entree I just threw some sliced chicken breast, multi-colored peppers, crimini mushrooms and shallots into a pan, sort of stir-fried and tossed some grated parmesan in at the last minute.
