I'm washing a load of the white towels, so I have the detergent plus bleach in hot water started, I throw in some of the towels, and I see a li'l wolf spider crawl out from the dirty towels!

I dug in, found her before she got wet, burned my hands a little bit, but I got her out before she got hurt, I think.

I was listening to a mix on Spotify and a song by Delain came on. Delain's main vocalist is Charlotte Wessels :dutch: (and the song was The Gathering ... no connection to the band The Gathering whose main vocalist is Anneke van Giersbergen :dutch:) ... but then a male vocalist came in, and I thought that sounds like Marco Hietala :finnish:, so off I went to the interwebs to check, and yes, he guests on this track. I was right! Petty accomplishment!

Connections.
Marco Hietala is the bassist and male vocalist of Nightwish ... whose current female vocalist is Floor Jansen :dutch:.
Sharon van Adel :dutch: of Within Temptation has also worked with Delain.
I know that both Floor and Simone Simons :dutch: of Epica have worked with Tarja Turunen :finnish: of Nightwish, and Floor has guested on an Epica track too.
Everyone works with everyone in the music industry eventually, it seems. Especially Dutch female metal singers.

The second best thing after how much I made is that it's my first attempt at kimchi, so it might suck. The third best thing is that I haven't finished cleaning up after myself, and I NEVER WILL.

OK, the kimchi is fermenting nicely, but QUESTION:

Is there any reason it'd be a bad idea to re-season it a little in the middle of the initial fermentation? It's a little blander than I want, so I'd like to add some salt and chili.

I know nothing about Kimchi itself but in the case of fermentation it’s the lack of oxygen that’s important so any additions are probably best done sooner and some additional time added to fermentation or after the fermentation and let it be for now.

LOL Ari. I was just coming here now to PM you.

I have reseasoned and re-jarred it, and I was coming back to send you and Qingdai a PM to see what you guys thought. I'm going to leave it at room temperature for at least one more day, check how the fermentation is going, then refrigerate it if it seems like it's still coming along.

Plus, I'll make sure to eat some myself and wait 24 hours at least to make sure it doesn't kill me before I let anyone else try it.

Good news, you should at least not die as the oxygen loving bugs are obvious about trying to kill you. I had a jar of attempted culture fermented pickles that got a constant tiny oxygen exposure from a cracked plastic lid. The brine was slimey and the previous crispy pickles were mush to the point shaking the jar pulverized them. I did not try the unexpected pickle soup.

UPDATE: I just got the verdict from my bestie, who never blows smoke up my ass, who said my kimchi is 'awesome'! She is Chinese, but her family was in the food industry and is more pan-Asian culturally and very fussy about pretty much all Asian cuisines, so that is a solid endorsement. I knew I liked it, and I've eaten a stupid amount of it already, but I also knew I was biased, so I left open the possibility that it was that.

I wish there were a more American word for 'chuffed,' because I am that. Chuffed.

My very first attempt at kimchi turned out awesome, you guys.

And I'm chuffed.

Toss me another culture to appropriate. I dare you.

Ah, that makes sense. I've never heard that usage before.

I don't think we have a concise term in the US for that, at least not that I've heard. I'd have to say 'overly pleased with myself' or something.

I'm driving on this small street, being closely followed by one of those pointlessly gigantic pick up trucks, and I need to make a left. However, there is a detour from a larger street nearby, so oncoming traffic is unusually heavy.

Normally, I would just go up and take the next left that has a four way stop, because it's kind of six of one half dozen of the other, and they both end up in the same place. But I chose to stand my ground and wait for a natural break in the oncoming traffic to inconvenience that truck as punishment for being pointlessly large.

I feel better for having done my petty deed of the day.

I guess this is my personal thread to brag about dumb, mostly food related stuff.

To wit.

Matlock eats yogurt every day, so I have been seeing how long I can go making a new batch of yogurt from the culture from the previous batch, and I'm pretty sure I'm somewhere around round ten or so now. It has been a long, long time since we've had to buy yogurt to get it restarted.

Also I got a half bushel of beets not long ago, and roasted and canned most of them, and the rest (seven quart jars) I am fermenting for pickles right now.

I had to work today and of course stopped by my local Tim Hortons for a double double.

A Manager type fellow was snapping his fingers at his hard working team to pick up the pace. He was harassing them and intimidating them - and I felt obliged to say something (publicly and loudly) 2 of the ladies came to me and thanked me for saying what I did and the Manager apologized to everyone in earshot and slunk off to lick his wounds.
