Pizza comes out truly exceptional on the grill. Far better than in the oven even with a pizza stone.

The trick is to be sure your dough is rolled out and chilled before you attempt to flop it onto the grill. As soon as it touches the grill the bottom will instantly begin to crisp up, so you don't have to worry about it sagging into the coals.

It's just the transfer from hands/platter to grilltop that's the booby trap. If it's really hot outside, you can freeze the rolled out dough for like 10 minutes before effectuating the transfer.

Besides that, you want to brush the underside with olive oil before putting it on, then cook it covered for 4-5 minutes. Brush oil on the top side, flip it, add the toppings, cover and cook again for 4-5 minutes.

Obviously this is the fresh dough instructions. I'm sure it's much easier to use pre-cooked crusts because they don't have to actually cook on the grill so much as heat up, and you don't have to fret about the transfer.

I'm pretty sure I'd go into full-on :freakout: mode while trying to get all the sauce, cheese and toppings on that sucker with a fire underneath it.

Naw, you just prepare, have bowls of sauce and toppings ready by the side of the grill.

I had a whole grilled pizza party once, complete with a buffet's worth of weird toppings I'd made like eggplant caviar. It was slightly chaotic doing 3 or 4 at a time, but nothing I couldn't manage, and I'm pretty uptight when it comes to timing. Making a single pizza is a breeze, trust.

We had a storm come in last night and we're still pretty cool and overcast, so I'm going to roast up all the vegetables tonight. I think we have beets, three colored fingerling potatoes, and cauliflower, but I'll have to check and make sure I'm not missing anything.

Then, I'm going to make garlic toast out of what's left of the bread, maybe with some parmesan on it too.

For some reason, roasted vegetables and garlic toast sounds really good to me right now.

I think we probably eat more meat than it looks like. I make chicken and pork chops and stuff pretty regularly, but it's usually kind of simple and boring, so I'm less likely to mention it, I guess.

Niçoise salad -- well something like that

Fresh steamed green beans, new potatoes and carrots. Need hard boil an egg tonight (finishing up left overs). No dijon vinaigrette but a balsamic one instead.

ETA: It's going to be too hot this week to do any serious cooking.

Wow, liv. That's more ambitious than I. I didn't even fix the Boboli pizzas, but I got the impression it was easy. Boboli, of course, are pre-made thick crusts that come with a sauce packet. It's really quite easy, in that one just adds what one wishes on a pizza. Each of the three of us got to build our own pizza to our tastes. Then ten to twenty minutes on the low fire grill and VIOLA!....you've a big violin? No, your pizza is ready.

The nicest part was that we didn't have to turn on either the stove or the oven on a 90+ degree F day.

I have a pizza stone...I've never used it correctly, I'm fairly sure. I thought it was to keep one's pizza warm, but I'm getting the impression one actually cooks on it. Can I get details?
