Grillin' and chillin' at Casa de Thrope. Everything was cooked on the grill tonight!
Boneless, skinless chicken breasts marinated in olive oil, lemon juice, and tarragon. Portobello mushrooms and artichokes brushed with olive oil, minced garlic, S&P. For dessert, Pink Lady apples filled with raisins, cinnamon, sugar, and butter.

I made a yummeh chicken last night.
Preheat the oven to 425 . Take your basic chicken breast, halve it, trim any fatty bits and flatten slightly just so it's less uneven.
Heat a splash of olive oil on medium-high in a large pan. Rub the chicken with salt and pepper, then brown it in the pan. I did about 4 minutes on each side, but I probably could have cut that down to 3. Set chicken aside.
Mince half an onion and some chives (or scallions or shallots or anything along those lines). Sautee them until soft in the same pan you just took the chicken out of. Mince or press a couple of garlic cloves into the onion mixture and sautee until fragrant (about 30 seconds).
Take the pan off the heat and add 1/3 cup of bread crumbs and 2 heaping tablespoons of drained horseradish. Mix it all up.
Make a little mustard combo of yellow, Dijon and country Dijon. (I ended up with a little over a 1/4 cup, and had a lot leftover.) Spread it on both sides of the chicken. Press the bread crumb mixture on top of that.
Pop the chicken in a roasting pan and cook it in the oven for 10 minutes. Deliciousness ensues.

We're having roasted eggplant dressed with pomegranate molasses, grilled chicken, and tzatziki, all crammed in pitas and scarfed in front of the NBA finals. Yummers.

Today it's zucchini, vidalia onion, red pepper, jalepeno pepper, tomatoes, and potatoes mixed up with sour cream and mozzarella cheese over homemade cornbread. Mmmm.

That sounds yummeh, curses (although I tend to hate cornbread unless it's made with chunks of actual corn).
I made a barley salad niçoise tonight. It's really unexpectedly delicious. I think it's because I cooked the barley in tomato juice (and a splash of white wine and chicken stock) instead of water. Then I added chopped green onions, steamed corn, chopped hard boiled eggs, tuna soaked in a tbsp of white wine vinegar, and topped it all off with a fabulous garlic anchovy dressing.
Oh, and check it. If you ever have to mince or mash anchovies, curl those badboys up in a garlic press and squeeze. It's miles easier than knife work with mushy, oily anchovy beasties.

We went to a place called Din Ho Chinese BBQ tonight, where we had bbq chicken and pork, sauteed vegetables, a huge bowl of hot and sour soup and another huge bowl of rice for just about $20. We'll be going back there fer shur.

Fried rice, black beans, onion, cumin powder and garlic with siracha hot sauce in olive oil.
Garnish with cheddar cheese and salt. I also use it for filling enchiladas.
Side dish:
Boiled lacinto kale with apple cider vinegar, more olive oil, salt and pepper.
We are feeling poor tonight, but full of fiber.

Last night, garlic and jalapeno sauteed tilapia with steamed broccoli.
Easy and delicious. Melt 1 tbsp of butter, add a tbsp of jalapeno juice (from jar of pickled jalapenos), about a 1/4 tsp each of garlic salt and powdered onion. Maybe add some fresh garlic if you're crazy for the stuff like I am. 1 tbsp of red wine vinegar (I substituted rice vinegar...but whatever.) Dip tilapia filets in mixture; coat thoroughly. Saute in preheated pan. I just poured the mixture in with the filets, because why the hell not? At the same time, saute about a 1/3rd cup of the pickled jalapenos. Use as garnish.
Mmmmm.
