This country started as a loose federation of provinces, Holland being the most important, richest and most heavily populated one. Plus most of the trading, conquering and pirating was done by Holland (or Zeeland, which is another coastal province), so most furriners thought Holland was the name for the entire country (like many people do with England/the UK). And many Dutch people use the terms as if they are synonyms too
Holland has been split into two provinces, North and South, meanwhile. Amsterdam (and Alkmaar and Haarlem) is in Noord Holland, Rotterdam and The Hague in Zuid Holland.

The only reason I could take pics is because Widget is having a snooze, I ate earlier so I have his sitting ready to warm up. (Well, not the shrimp)
The potatoes are Yukon Golds, that's why they look so yellow. The carrots I steam and then toss in melted butter/maple syrup.

We didn't have gummy worms, so I made falafel with quinoa tabouli and a salad with yogurt dressing. I put sriracha all over mine because I am all diverse and multicultural like that.
And now I will have some of that lamb.

Tonight is Jamaican Yuca Shepherd's Pie (with sweet potatoes, kidney beans, and plantains), jicama salad with pineapples and oranges, and maybe some rice of some sort.
