Default Three Xmas Recipes Without Turkey, and a Question

Not everybody wants turkey for Christmas. Turkey, in North America, is for Thanksgiving.

ROAST GOOSE

Ingredients
1 domestic goose (10 to 12 pounds)
Salt and pepper
1 medium apple, peeled and quartered
1 medium navel orange, peeled and quartered
1 medium lemon, peeled and quartered
1 cup hot water

Directions

1 Sprinkle the goose cavity with salt and pepper. Place the apple, orange and lemon in the cavity. Place goose breast side up on a rack in a large shallow roasting pan. Prick skin well with a fork. Pour water into pan.
2Bake, uncovered, at 350° for 2-1/4 to 3 hours or until a thermometer reads 180°. If necessary, drain fat from pan as it accumulates. Cover goose with foil and let stand for 20 minutes before carving. Discard fruit.


Nutrition Facts
4 ounce-weight: 376 calories, 26g fat (8g saturated fat), 108mg cholesterol, 84mg sodium, 4g carbohydrate (3g sugars, 1g fiber), 30g protein.

Rack of Lamb o'God:

Marinade: Four cups of red wine, 1 tsp. turmeric, half clove garlic, 1 tsp rosemary, 1 tsp curry powder, 1/2 medium size onion, 2 tsp. salt. Crush garlic and onion, mix all in a bowl.

Place rack of lamb o'god in roasting pan. Cover with marinade in refrigerator for eight hours. turn rack every two hours, while pouring marinade over it.

Preheat oven to 450 degrees. Roast for 12 to 18 minutes depending on how done you want it.. If rack of lamb o'god shows any reluctance to be roasted, quote from Jerry Falwell, Profit Pat Robberson or the bibble until it falls down.

Serve with good red wine: (Cape wine is best or a good red from Israel)


Pulled Jesus Wraps

Ingredients

1 boneless Jesus roast (4 lb)
1 bottle (18 oz) barbecue sauce

Coleslaw
1/2 head green cabbage, shredded
2 large carrots, shredded (1 cup)
3/4 cup mayonnaise
1/2 cup buttermilk

3 tablespoons sugar

1 1/2 tablespoons white wine vinegar

1 tablespoon lime juice

1/2 teaspoon Dijon mustard

1/4 teaspoon onion powder

1/4 teaspoon ground mustard

1/4 teaspoon salt

1/4 teaspoon freshly ground pepper

24 (8-inch) Old El Paso™ flour tortillas for Burritos

Steps

1 Place Jesus in 3 1/2- to 4-quart slow cooker; pour one bottle barbecue sauce over top. Cover; cook on Low heat setting 9 to 10 hours.
2 Thirty minutes before Jesus is done, in large bowl, toss cabbage and carrots until mixed. In small bowl, mix remaining ingredients except tortillas with whisk until sugar is dissolved. Pour over cabbage mixture; toss until coated.
3 Transfer Jesus roast to bowl. Shred Jesus, using 2 forks. Skim fat off surface barbecue sauce liquid in slow cooker; pour over shredded Jesus. Stir in more barbecue sauce, if desired.
4 Using slotted spoon, spoon about 1/3 cup Jesus mixture over tortillas. Top with about with about 1/3 cup coleslaw; roll up.
Time 2-1/4 hours + standing

Makes 8 servings

And the question. Does anybody have a recipe for whole Lamb of God that doesn't involve zapping the Lamb of God with nuclear weapons? I have recipes for Lamb o' God burgers, Leg of Lamb o' God, Rack of Lamb o' God. But every recipe for cooking whole Lamb o' God begins with "First hit the Lamb of God with a 5 megaton hydrogen bomb." I have no objection to nuking the Lamb of God, but I think my neighbors would object to setting off an H-Bomb in my kitchen.

This is not Hannukah.

This year, we're doing the Jewish Christmas feast...we're going to see a film ('Vice') and then out to our favorite Chinese restaurant.
