We have decided to get three. The Moscos are pretty hot, so I figure we'll get one more batch of those, then something milder like Anaheim mediums or something, for in case any crybabies come over.
And I'm going to start up an intense green chili experimentation period, where I make a bunch of batches and tweak them along the way so I can get it just right. Over the past year, I've really come around to Colorado style, so I think I'm going to focus on that.

It's green chile mania 'round here right now. We bought a medium size bag at the farmer's market this past weekend - what they said was the "medium" hot - and WHOO BOY! Put a little chopped up (maybe 1/8 cup) into some leftover rice as a test and I was sweatin' and wiping my nose, and I can handle quite a bit of heat.
My question now is, since the amount purchased will go a lot further than I thought, can I freeze some of it? Not sure how long it will stay good in the fridge in a ziplock bag.

I know right? It looks like this year was an unusually good season or something. There seem to be more than usual, and better selection too.
But yes, they're perfect for freezing. I freeze bushels and bushels of them to last the whole year. I divvy them up into sandwich bag sized portions so I can just thaw out like 1-3 bags depending on what I'm doing with them.
Also, you probably maybe know this, but if you remove the membranes and seeds, it cuts down the heat quite a bit.

We waited pretty late this year mostly just because it didn't feel like fall yet until this last week or so. We have been getting ours from this one company that has like six stands, though, and one place that is open year round, so we weren't risking missing out entirely.
