Well it was a burrito, and there was chicken in it, it just wasn't any kind of traditional Mexican recipe that decent people have heard of. Georgians are cute.

I am eating my cornbread concoction that I made the other day. Basically, I browned ground beef in the cast iron skillet and then poured cornbread batter on top of it and put some cheese in there too. It vaguely resembles "Mexican" cornbread. I have been surprised that it is improving with time and can be successfully nuked.

Sometimes I just want to eat cornbread, and with RA not here I don't have to make it sweet (which is an abomination).

Buffalo chicken pizza with a buttermilk, blue cheese and chive sauce. I dredged the chicken chunks in herbed cornstarch this time before browning them in the pan. They came out with such a delicate, beautiful golden crispy crust that I almost didn't put them on the pizza because I knew they'd lose some of that perfect crispness.

They did, but it was still worth it.

Combining two threads, what's for dinner and the picky eater thread.

Pastor Ryan's Bolognese

I didn't want to do pasta so... I received a spaghetti squash in my last batch of produce. That is now in the oven roasting and I'm going to try that (as my picky food, never was fond of squash) with the bolognese.

All in all not too bad. I wouldn't go out of my way to order one again but I won't turn my nose up at it if another comes either.

Maybe it was in the way I prepared it?

Light brushing of olive oil
Salt/pepper

Then into a 375 oven for 45-60min

Is there some better way I could do it?


The sauce is quite good and will be even better tomorrow after it has been in the slow cooker for a few hours.

I made a big ham and potato casserole and some ham and cheese muffins to freeze, so Malloch will be having what I set aside for him of that. I need to have something but nothing sounds appetizing.
