Re: Hummus, anyone?
I add Siracha sauce to the hummus when I want it to be kicky.
It's the bomb.

It does! I fortunately have enough crook neck squash and zucchini left over from a casserole I made last week. Yay!
It's funny. I spent my entire life despising all squash but butternut, but this year I suddenly began to love even the most despised crook neck (yellow summer squash).

Re: Hummus, anyone?
this one comes out pretty good, original recipe is below. I add an extra garlic cloves, and use 1/2tsp cumin. a little sumac and thyme adds a nice flavour too. cut back on the lemon juice if you use sumac in it. or you can completely substitute the lemon juice for sumac if you want
2 cups chickpeas, drained and rinsed
3 tablespoons of tahini
¼ cup fresh lemon juice
1 ½ tablespoons olive oil
¾ cup pine nuts, lightly toasted and finely chopped
¼ teaspoon cumin
1 clove of garlic, crushed
1 teaspoon salt
3 tablespoons of plain yogurt
1 teaspoon cilantro, finely chopped
2 tablespoons water

Re: Hummus, anyone?
Ok, I did the Lisarea blender attempt, without peeling or mashing stuff through a mesh colander. It was uber smooth and tasty, but dense. The processor makes it airy and light. I have to say that I actually prefer the dense stuff. However, if I really feel the urge to make a huge mess, I think that I will blend first and then process. And, Liv, you were so right about adding more oil. I slathered some on my fish, my chicken, and even on a roast (but it was uber pepper and cayanned), depending on the added seasonings, it just made this fantastic marinade/crust. Hummus is my new season all. And it is sooooo cheap!

NM. I am thinking of fish tacos. I will make my own corn tortillas and garnish with fresh cilantro from the garden and tomato, but remove the cumin. Yum

Re: Hummus, anyone?
Sumac? I am not sure that I have ever seen this seasoning. We have poison sumac, so I will research this.

I had meant to quote my original statement. Anyway, I think that cumin would be great mixed into the tortilla.

Red Sumac is a tart seasoning but less so than lemon, plus it looks good sprinkled on the hummus.

Re: Hummus, anyone?
Huh. I have some Syrian za'atar, I was wondering what is in there. It is very different from Palestinian za'atar. Although according to this site there is sumac in that too. I have never seen it in Syria, but Palestinians eat za'atar a lot.

Re: Hummus, anyone?
I hadn't heard of it before, either, until I saw this article:
Spice Hunting: Sumac | Serious Eats
I'd had za'atar before, but didn't know what it was called or what what in it. It was just that stuff that Middle Eastern restaurants have.
Anyways, I order most of my herbs and spices online, so I started adding sumac, and I use tons of it now, both by itself and in za'atar.
You should get some, I think. It's pretty great stuff.

Re: Hummus, anyone?
I thought it was mostly thyme, especially because za'atar means thyme. But yeah, I am gonna get me some sumac.
