Eggs and avocado are always great together. One of my favorite simple dinners is scrambled eggs with a mixture of coarsely mashed avocado, chili powder, hot sauce, garlic and lime juice mixed in at the end. Top with a slice of torn up pepperjack for the melty coup de grace.
They're also key to a version of a dish I had a sushi place. Thinly slice an avocado and lay it out on two plates alternated with thinly sliced sushi-grade tuna or boiled shrimp or if you want to keep it vegetarian, thinly sliced cucumbers, radishes, whatever strikes your fancy. Once you have that laid out all pretty, sprinkle chopped green onions and broccoli, alfalfa or clover sprouts on top. Make a dressing from 2 tsp of toasted sesame oil, 1 tblsp soy sauce, 1 tbsp hot garlic chili sauce and drizzle it over the salad. You don't toss it or anything, you just sort of swirl everything in the dressing before scarfing it down.
That's why you should have done like I told you in the Picky Eaters Challenge and made a ranch dressing out of it. Avocados are very high in Omega 3 fats, which is what gives them that very rich, buttery texture. I get why someone might not like that in chunks, but it makes a perfect creamy dressing, custard or mousse. FREE YO MIND AND THE REST WILL FOLLOW.
