Ch-Ch-Ch-Chia!
I made pudding out of 1/4 cup chia seeds, 1 cup of skim milk and some thawed frozen strawberries last night. Just stirred everything together in a small bowl, covered it with plastic wrap and popped it in the fridge overnight. I tried it for breakfast this morning and you know, it wasn't half bad. It has a texture reminiscent of tapioca. The strawberries were crap, but if I'd used fresh fruit, like the blueberries my mom keeps around because her doctor told her they were "protein fruits" or maybe a chopped up a banana, it would have been genuinely tasty.
I appreciate it when a weird health food trend turns out to be pretty cool for real. Chia's ability to go from crunchy little speck into reasonably dense gelatin when combined with liquids opens up interesting possibilities beyond just the populating of terracotta heads with green afros.

New experiment today. I pulverized the chia seeds in a spice grinder before adding just a little liquid. They gelled up much faster and the texture is smooth, not tapioca-y. I only added water this time just to get a clean sense of the taste, and it's basically neutral with a very light, very pleasant fruitiness, like sort of a hint of melon.

Best one yet: 3/4 cup almond milk, 1/4 cup Greek yogurt, the contents of two vanilla bean pods, two superripe bananas and a 1/4 cup ground chia seeds. I smushed the bananas into the yogurt leaving some chunks, then whisked in the vanilla, milk and chia and left it in the fridge to set overnight.
It was already good to go in half an hour, but it was muuuuch better the next morning. It really tastes like banana pudding, which is one of my favorite foods of all time.

Did you buy the big bag from Costco? I have half a bag left from my experiment with them. I have to check if they are still good.

Two pounds. It doesn't seem bad/off (but how would I know, really), so I think we'll make some pudding this week.

I made chia chocolate pudding for the first time and it's pretty damn good. I had to add sweetener (liquid stevia) on account of the cocoa powder, but it's not obnoxious. All the other chia puddings I've made were fruity, so this was quite different. It covers up the natural melony taste of the chia entirely.
