We're having garlic spaghetti and probably asparagus because I was too lazy to go grocery shopping today.
Last night, we had Korean! I got bibimbap, and Maturin had this really good spicy soup thing with pork ribs and potatoes, and we both ate lots of kimchee.

Whole wheat pasta with homemade tomato sauce and baked chicken parmesan. Brownies for dessert that I tweaked and made a bit healthier.

It worked! I just tried that because meatloaf usually takes way too long, and I needed to have it done quickly.
Bonus plus: They cook more evenly, and there's more sauce topping stuff. (I use a kind of modified version of a Texas BBQ style sauce--cider vinegar, molasses, S&P, Worcestershire sauce, tomato paste, liquid smoke, stuff I'm forgetting.)
So yeah, I highly recommend muffin tin meatloaves.

We did that the other day with the excess meatloaf mixture. It was great to pop out the little muffins and throw them in lunches. I'm thinking they would be great to freeze too.
