What's really odd is that few people here even seem to have heard of chile verde, and those who have make a crappy one. I was beginning to think it was more of a Baja thing, but now I find out you damned Okies make it. Stupid Houston.

TRAGEDY! TRAGEDY!
Those chiles are not hot enough. Not at all. I made green chile with twice as many as usual, and it was barely spicy at all. So now I have to get a batch of hotter ones to mix in. Maybe there will be another contest soon!
Also, I wanted to show you guys this. It is doing the YMCA.

OK, I peeled and put up a "half bushel" of Mirasol green chiles tonight. My hands feel all prickly, so I think they are probably spicy enough. Also, that was way more than half a bushel, and the peppers are smaller and thinner skinned than the last bushel, so I win the Free Thought Talk Forum Turnip AGAIN!
HOORAY FOR ME!
But also, you should come to Colorado for green chili. We will have enough now.

HELLO BITCHES AND BITCHETTES!
I am making some Colorado style green chili, which I don't think that I have ever done before! It is all scary and magical!
So far, I've got a small amount of slow roasted pork, shredded. Then some garlic, tomatillos, a small can of diced tomatoes, and half and half Big Jim and Marisol chiles.
Also salt, a bay leaf, and I think I'm gonna add some cumin, and possibly a dried red pepper. Maybe some other things, too! I don't even know yet! I'm making a soupy kind, like the sort you put in and on burritos, so I might need to add some chicken stock to get the consistency right. (I just made a new batch this week, so I have some.)

That's an extraordinarily beautiful mutt of unknown provenance. Most likely some sort of pit bull mix, although it's possible she's more some other molosser mix like Boxer or American Bulldog or something.
We just call her a pibble because dogs that look like her are rounded up and killed in some areas for looking like that.

HAY YOU GAIZ my Colorado Green Chili experiment is a success!
It was p good! We had it smothered over bean burritos, then topped with a fried egg, which is New Mexico style.
Here is what was in it:
Small amount of slow cooked, fork-shredded pork (I just had two of those really janky marbled pork chops)
A couple cloves of garlic, minced
One fourteen ounce can of petite minced tomatoes
About ten tomatillos, diced small
A lot of green chiles (I used four sandwich bags) Probably at least a couple pounds, and you could use more. Diced small.
Chicken stock. One small Tupperware container, ha ha! No, I think it was like about a pint or so.
Bay leaf, salt, Mexican oregano, and cumin
I had it on relatively high heat while I was chopping up everything and throwing it in the pot, then turned it down and simmered it for a very long time.
I am probably going to be tweaking it, of course, but I think I'll stick with this basic recipe. It is on the chunky side for this style, so you could use pureed tomatoes, or just put everything but the pork in the food processor and blend it together if you want it less chunky. I guess you could put the pork in, too, but I'm not going to tell anyone to puree meat because I am just not that kind of person.

Oh, hello, losers of green chile peeling contests!
We just got a bushel of Mosco chiles, which we haven't gotten before. I got a bushel put up with enough reserved to make a batch in a little bit after I am not so tired anymore, so we can try them before we commit to our next bushel.
So here's the question: I've been planning to get two bushels, because last year's bushel and a half ran out before we were ready for it to. We were planning on upping to two bushels, but now I'm thinking, "Well, hey. What about three?"
I think I sort of hold back and don't make as much just because I know my supply is limited, and It seems unlikely we'd ever be like, "Oh, no, we have too many of these delicious green chiles!"
Who among you dares us to get THREE BUSHELS of green chiles this year?
