Default Squash recipes GO!

I have steamed it, mashed it with milk ala liv's grandma, and included it in a frittata and I still have 8 million yellow squash!

Help, how about some main course suggestions? Anyone?

You can substitute yellow squash for zucchini in almost anything, so you could make breads and ratatouille. Curried squash soup is also really good.

Slice it - long ways, Marinate it in Italian Dressing, brush or spray it with Olive Oil, and grill it. Goes good when you are grilling in the warm weather. You could probably also broil it if you need to do it inside.

I wonder how that would go in Musaka? I used to go to a little hole in the wall resturant that served the most outrageously good Musaka every thu. and would go just for that. When I was let go from the job I didn't have a reason to travel every Thu. for the special. The wife has an aversion to Eggplant so I thought squash might do instead.

I made a potato, squash, onion, ham and cheese casserole last night. It was filling and frugal. Kiddo loved it and ate two helpings!

You can cut larger ones in half and scoop the insides out, then make a stuffing and bake. Stuffing = any random junk you got about: squash innards, ground beef, bread crumbs, egg, cheese, veggies.

We had fried squash all the time when I was a kid: dredge rounds in seasoned flour or cornmeal, pan fry til golden. You can also grate them, salt and squeeze the water out, mix with egg and fry blobs of them that way.

Raw yellow squash is good in salads.

If you like caponatina* you can make it with squash instead of eggplant.

*Most people call it caponata but to my mom it's always caponatina, pronounced nothing like you imagine.
