There is little doubt that creationists have this sort of mentality. AiG's
statement of faith includes,
By definition, no apparent, perceived or claimed evidence in any field, including history and chronology, can be valid if it contradicts the Scriptural record. Of primary importance is the fact that evidence is always subject to interpretation by fallible people who do not possess all information.
Still, I have found no evidence that Morris truly said that. There are no specific citations. The highly dubious picture puts further doubt on it.
So, I'd say the answer to your question is "no."
