There is little doubt that creationists have this sort of mentality. AiG's statement of faith includes, By definition, no apparent, perceived or claimed evidence in any field, including history and chronology, can be valid if it contradicts the Scriptural record. Of primary importance is the fact that evidence is always subject to interpretation by fallible people who do not possess all information.
Still, I have found no evidence that Morris truly said that. There are no specific citations. The highly dubious picture puts further doubt on it.
So, I'd say the answer to your question is "no."

That exact quote, attributed to Morris, is all over the damn internet... AND ... he has been known to have this mentality and you still doubt it because the picture is wrong? Okay, you're entitled to your opinion.

Yeah, I found it all over the Internet--always on atheism-themed websites and never containing citation other than "Henry Morris (Institute for Creation Research)" and "Quotes from the The American Taliban." I often fact-check supposed quotes like these. Usually they are atheist/evolutionist quotes asserted by Christians. Whenever I see that sort of pattern on Google, I conclude that the quote is BS.
