Default Soylent Green! Fake Meat!

OK, not so much soylent green. But I did just make seitan today, for the first time, using this recipe. Spicy Italian Vegetarian Sausage. It was as easy as the video. It's now in the fridge firming up a bit.

I get a craving every now and then for sausage McMuffin with egg, but I know it's very bad for me, as much of McDonald's stuff is. So I make my own with Morningstar sausage, real cheese, and real eggs. And a lot less grease. But Morningstar sausage is sort of tiny, and I'm looking for a larger meat patty for my muffin. Hoping this stuff fits the bill.

I'll post a photo when I prep it to eat.



And here's what I would do differently next time: Crush the fennel. Cook in pre-made patties, rather than large log I have to cut up.

Don't fry this stuff, bake it, or sauté it. I've tried frying and baking, and while both are excellent, baking is better for you.
