I have moose
A friend of mine has far more moose than freezer space and is giving lots away. Professionally processed and wrapped moosemeat, even. I took some steaks and sausage but there's a whole box of it left over in borrowed freezerspace. Should I look for any bit in particular? What does one do with moose?

Any of it. I found moose to be the best wild game meat by far.

We tried the moose sausage over christmas, just thawed it and fried it up.
It was very good, but incredibly lean and dry. Perhaps we should have incorporated it into the dressing.

We ate moose pot roast on several occasions when we lived in Alaska. It was delicious. The husky bitch who had just had a litter of puppies in our living room thought so as well. She ate a whole frozen roast, paper and all, while my wife had her back turned.
Seriously though, my recollection was that the moose roast was excellent. I guess I would say that it compared quite favorably to the best beef roast I have eaten. One ought to, perhaps, factor in the fact that we had been dining almost exclusively on salmon for about two weeks prior to that first taste of moose. There is a remote possibility that this factor influenced my response to my first taste of moose.

Lean meats need to be cooked at a lower temperature than fatty meats. Long and slow help overcome the dryness.

We have the moose steaks in the slow cooker, and they're tormenting the whole family because they smell fantastic and we won't be able to touch them all day

I saw that in a chili recipe once, "simmer for as long as you can keep 'em away", which seemed kind of mean.

I belatedly report that the slow-cooked moose steaks were a great success. Like the nicest roast beef we ever had.

God DAMN I'm jealous. I haven't had roast moose in 13 years, and yes it is literally the best "roast beef" ever - because when you slow cook it, it's better than beef.
My uncle used to go hunting up north until he fucked up his leg and after that we never got it anymore. Glad you did it well and enjoyed it, though.
