Default Wtf is for dinner the diet version

I am back on the lowcarb wagon, last night I made lasagna, sort of. I took ricotta and mixed in a small amount of salsa and garlic as I had no ragu. I had cooked a large amount of sausage earlier and saved it. For my pasta filling I used a couple of layers of wax beans. I baked for about 15 minutes, es sprinkled on the cheese. It was fucking excellent.


So what kind of diet meals are yall making? Extra credit for lowcarb meals.

My old standby is usually chicken breasts baked with a breadcrumb coating, quinoa cooked in chicken broth and sweet potato fries.

I used to make a nice meal by chopping up some potatoes into cubes and pan frying them with some olive oil on high heat to sear the sides, then cooking them on a medium heat for about 20 more minutes (stirring constantly). Then throw in some cubed chicken breasts along with some chopped veggies that you like (I used broccoli and bell peppers with some chili peppers thrown in for heat). Keep stirring and it should all be done in about 10 - 15 minutes.

Then one day I decided not to cook the potates and just start with the chicked for a couple of minutes and then add the veggies. It was just about as good and far fewer calories and carbs. Simple, but tasty in my opinion :) Of course you can add any and all spice combinations that you already enjoy in other meals to flavour the chicken and veggies, I like garlic, mixed herbs and little season salt.

Toasted almonds, cubed/sliced chicken strips, pea pods. Stir fried in 1/2 tbsp of olive oil, with garlic powder, salt and pepper. Near the end, mix in a 1/4 water, 1/4 teriyaki/soy sauce, 1/2 tbsp cornstarch/arrowroot mix, let thicken.

Serve over brown rice. For low carb diets, cut the white rice and stick to low glycemic index carbs like brown rice or beans.

eta: in my opinion, it's not the carbs that are the problem, it's the refined carbs that are the problem. Stick to stuff that your body takes a while to digest. Stay away from white breads, white rice, and eat less refined sugars.

A "big ass" salad with some sort of protein source thrown on top of it is super low carb. I also agree with Chris Porter comment:

You would be better served when eating the "carbs" you do eat to make sure they are whole grain.

Roasted turkey breast/jarlsberg light swiss cheese "rollups" with a little spicy mustard and maybe a tomato. And definitely a big-ass salad. Cucumbers and tomatoes and red onion and peppers and stuff are like FREE!!!! (I think).

When we make spaghetti, I have my sauce over cauliflower.

The tuna sandwich mix gets spooned on lettuce instead of on bread.

Beans are full of starch, yet they don't seem to affect my blood sugar. One of my friends had big spikes every time she ate beans. So results vary.

I eat a nice lentil/mustard mix over greens too. Delicious.

Nicoise salad is pretty good, I just leave out the potatoes.
Cobb salad is also a winner.

Last night, my oldest son, a houseguest, and I went to Sammy's Woodfired Pizza because someone had told our visitor that Sammy's had excellent duck tacos. So: dinner last night:

Appetizers:
  • mini duck tacos (they were very good--low-carbing moi didn't eat the shells)
  • roasted asparagus with romano cheese and prosciutto

Main course: chopped salad, with pepperoni.

Count is also on a low-carb diet. She's only eating around 20g of carbs a day. She's also a vegetarian who hates eggs and mushrooms. But we've come up with some good solutions. Instead of pasta peel strips of zucchini and carrot and cook in a bit of butter and garlic then throw your sauce over the top. It's pretty good. Since you're a meat eater a good lean red steak will be excellent for you. Have lots of fresh veges, cauliflower, broccoli, zucchini, carrot, some pumpkin.

Have fun with the ketoacidosis. :)

Tonight: Buffalo burger (from Trader Joe's) seasoned with Road Kill Grill and grilled, served over mixed greens with avocado and kalamata olives, a glass of merlot, and some low-carb chocolate-almond popsicles made with coconut cream. Followed by a few squares of 72% cacao dark chocolate flavored with coffee and anise.

Sounds good, but legumes do it to my blood sugar. I chanced one falafel at a Turkish restaurant yesterday, and decided I shouldn't do that very often.

This one had no effect on mine. I also had walnuts. It might have been that the lentils, being tiny and fiber filled, had a better balance for me. For some reason sour things, like lime juice and vinegar seem to change the blood sugar score into the positive for me. Damn picky pancreas. Or it could be I just don't digest beans well at all.



Hah, of course now I can't afford blood strips so I can't experiment as much as I used to with different foods and what not.

I just swallowed some air. It is an extremely low calorie food, but I don't eat it very often because its flavorless and it makes me gassy

Last night was a work-related dinner--prearranged menu choices at a local restaurant. Took my mixed green salad with olive oil and vinegar. Chose the grilled salmon, had them hold the potatoes (ate the green beans and other veggies). Passed on the choice of flan or creme brulee for dessert, and asked for fresh berries, instead. (Got strawberries and raspberries). It worked.
