I think the longterm solutions for humans living is space is genetic and/or customized physical modifications to their bones to stop the degradation without need of exercise or gravity. Since besides that I haven't seen anything else that requires earth gravity. Rotating ships could easily get away with say 1/2 or some portion of earth gravity. All the benefits of having a down, while also appearing super strong.

I figure that once humans adapt to a zero, or low gravity environment, they will develop a physique more like that of a Chimpanzee, or perhaps Gibbon, where all four limbs are capable of reaching, and grasping and such.
As for the OP question, I will be willing to travel to Mars when they have First-Class passage.

I have read about, but don't know the full feasibility, of large space habitats dealing with radiation through processing and applying dried fecal cubes to the outside of the station to absorb radiation. In the same way I could see storing a consumable like water in an outside skin to absorb the radiation while also having a second use.

I'm sure it's a surmountable engineering problem, but if you add to that all the other life support stuff required it just sems to me that getting biology to live in space (or other planets) is mostly an expensive vanity project.

Indeed. Robots really are the life of space exploration. Autonomous robots at that, given speed of light communications is already a problem with Mars let alone an outer planet. Humans in space is really more about our species needing to go everywhere and touch everything... and probably try to have sex with it.
Although it's much much more feasible than some had assumed when space flight began. Yuri Gagarin, the first man in space, didn't have control of his craft just in case being in space made a man go mad or hallucinate or otherwise lose control of his facilities. In the odd event he needed to input commands he needed a passcode to unlock the system. There was a real fear that the nervous system somehow needed gravity to function and in continuous freefall would short out.
