brining a pork shoulder with thyme and bay leaves. I would love to smoke that sucker on the grill but I don't have enough time or charcoal. So into the oven it goes!

I am going to try this experiment of "being nice to Matlock," so I'm going to make a roast of some sort and mashed potatoes tonight. I'm still going to make him eat a salad, though. Can't be too nice or he'll start getting used to it.

I hafta cook this flank steak or it'll go bad. So it's tacos tonight (actually taquitos, but that makes people think of rolled-up thingies like flautas, which they ain't). I don't feel like doing anything, so Ima boil the whole sucker and use the water for salsita. I would passive-aggressively have Mrs. Puppet make the salsita since she "does it better," but I need to save that for the taco-frying stage. 'Cause that one is actually true.

Some pho or something I dunno. Because I made the executive decision to only host Tuesday dinners every other week instead of every week, and on the 'off' Tuesdays, my one friend and I go out and get pho or something instead, and this is my very first off week! I'm pretty excited even though it's just pho.
Also, I got a burrito this morning, and this afternoon, I am going to a hardware store, so everything is coming up Milhouse today.

What's the difference between a taquito and a flauta?
The only thing I can think of is that a flauta tends to be longer.

I am going to make hot wings and eggplant pizza with premade crusts to see how that works. I almost never make it because it's too much work making the crusts and the sauce and stuff. Pary for our lots.

Dinner tonight will probably be scrambled eggs with garlic chili sauce and avocados mashed into them. Will it be tasty? Sure. Will it be TURKEY MEATLOAF STUFFED WITH FETA AND TOPPED WITH TZATZIKI SAUCE? No. No it will not.

I have been bitterly envious of how Limoncello had wings the other night, so tonight, I am making wings with buttered noodles and salad.
Matlock is going to have buttered noodles and salad because I eat wings like the world's angriest gorilla.

Grecian Turkey Meatloaf
MEATLOAF
1 lb lean ground turkey
1 egg
1/4 cup panko or breadcrumbs,
1/4 cup finely chopped red onion
1/4 cup fresh chopped parsley (or spinach)
1/4 cup crumbled feta
1/4 cup black olives pitted and chopped
2 tablespoons hummus
2 cloves garlic minced
1/2 teaspoon basil
1/2 teaspoon oregano
salt and pepper to your liking
Mix meat, egg and ingredients thoroughly and divide mixture in half.
Spread half the meat mixture in bottom of a loaf pan (I lined mine with parchment paper)
FILLING
1/2 cup crumbled feta (or more if you like)
1/4 cup tzatziki
1/4 cup Cream Cheese
Mix cheese mixture, spread on meat layer in pan and top with the rest of your meatloaf.
TOPPING
I used a jarred bruschetta mix, but you can make your own
Bake at 350 for 1 hour.
Serve topped with a splooge of tzatziki.

Thank you, Limoncello! Making that this weekend. I might leave out the olives, though. I love olives, don't get me wrong, but I prefer to eat them raw.
