BTW, still taking the path of least-resistance, and sticking with OneNote for the moment. It's... fine.

I may try Notion at some point, but I have to sign up for it, and that's enough of a barrier.

I'm not renewing my Evernote subscription.

I have tried - and so far been quite happy with - Joplin as my Evernote replacement. The free version doesn't sync directly between devices, but if one has another storage medium such as Dropbox, the devices can all sync trough that.

It also allows an import of the exported Evernote data.

I am still getting used to the PC desktop app interface that has a "developer" look to the note next to the polished version, but I am getting there.
I have not tried the iPhone app, but the Android one at least is working fine.
