So I have decided I am going to poast one of my sloppy and impossibly vague 'recipes' for my awesome eggplant and feta pizza.
You make a pizza sauce, starting out by sweating one very finely diced eggplant in olive oil with the garlic, and with your spices. Italian ones, like you put in your marinaras. You coat those little diced eggplants with your spice sludge like whoa.
Then, you add in your pureed tomatoes and a lot of tomato paste, and you simmer it for a very long time, being careful not to burn it.
Then, you make a whole wheat pizza crust using the recipe for a whole wheat pizza crust. You roll that out to your specifications, brush it lightly with some olive oil infused with more garlic, which you made before.
Top this with a generous amount of your eggplant tomato sauce, then crumble up some feta cheese around it, drizzle a little bit more olive oil on it, sprinkle with some oregano just to say hello, then bake at the correct temperature and for the amount of time it requires to become fully baked.
This is an extremely delicious pizza that I would have made for dinner tonight had I had all the crap for it, which I don't.

Well, Petra, I keep seeing this thread and you've talked me into it. I just mixed up all the ingredients, and have 18 more hours to wait until I can mess with it again.

Well, it isn't anywhere near as purty as the loaf on the video, but it does taste really good! I am eating it right now with some of Qingdai's marionberry jam.

OH HA HA.
That is rustica bread, which is our favorite bread we always get from the farmers' market when we go. I'd been meaning to try the recipe in the NYT for a really long time, and had also separately meant to figure out how to make rustica bread also, but I never made the connection until I finally made it and we're like "HEY!"

We have a bread machine that we occasionally use. It's one of the better ones that turns out a decent loaf of bread.
When I was child, I used to love helping my Mom make bread. I would help her with the mixing and kneading. A couple of my favorites to make were Challah and Beer Batter Bread (another easy, easy bread to make).

ok, ciabatta is being left alone until some time tomorrow. I gave it a teaspoon of sugar too. The yeast needs something to eat. Why he left it out is a mystery to me

There are fermentable sugars in the flour. You don't need sucrose when you've got time.
