.. I found this on my HD, no idea where it comes from (help is appreciated)
6 boneless, skinless chicken breasts (like every recipe)
3 oz pepperjack chese, shredded or grated
3 oz cream cheese, softened
salt and pepper to taste
1/3 cup ranch dressing, room temp
1/3 cup mild picante sauce
Thaw chicken and place between two pieces of plastic wrap and pound with flat side of meat hammer (the 12 year old in me wants to giggle) until 1/4 inch thick.
Remove from plastic, then s&p both sides
In a small bowl, combine cream cheese and pepperjack cheese adn then split into 6 equal parts. Roll into small balls.
Take bacon and form a cross with two pieces on a tray. Place ball of cheese into the center off each piece of chicken and form chicken into a bundle. Place the bundle, opening down, onto the cross. Bring the bacon up on each side of the chicken bundle and pin to the top with a single toothpick in the middle.
Place in a 9x11 baking dish and cook for 30 minutes at 350. When done, broil for 5 minutes or until bacon is crispy.
Mix ranch dressing and picante sauce and pour onto serving platter. Place chicken on top of sauce and prepare more of the same sauce for dipping.
