Default Healthy recipes

Since there seems to be quite a few of us eating healthy or striving to eat healthy I thought we could share some recipes.

All of the ones I'm posting I have tried myself and found them worthy of sharing. :yup:

Blackberry Oatmeal Bars

Blueberry Flax Pancakes

Tropical Muffins with Coconut Macadamia Topping

Oatmeal Knots

Grilled Peaches over Arugula with Goat Cheese and Prosciutto

Apparently I am in need of some main dish recipes. I usually just cook up chicken or lately ground buffalo and have it with some veggies or brown rice. Or I make wraps or turkey chili or something easy like that.


The next time I make my pumpkin brownies I'll have to write down just what I put in there.

Protein Pancakes

Equal parts quick oats, egg whites, cottage cheese

Dash of cinnamon

Smash the cottage cheese curds so they are not so lumpy

Fry on a hot griddle, just like pancakes

Top with fruit

Good one. I've tried pancakes with oats but not with cottage cheese. I'll have to make them for hubby tommorrow.

They actually take some getting used to :laugh: they have a weird texture, but they are low fat, high protein and filling. :nod:

Oh I'm sure I'll like them. Hubby on the other hand might need to adjust to them. That's fine though, he's been ordered to not gain any weight since he can't exercise right now. He'll get used to it. :D

I have this Apple Crisp with Macadamia Nuts in the oven now. I didn't have cinnamon or apricot preserves so I substituted some currant jelly and allspice. It smells heavenly.

I made sweet potato fries for hubby this evening. No real recipe just cut up some sweet potatoes mix with a few seasonings and olive oil, bake until crispy. He loved them.

Tommorrow night I am making him Feta Chicken and Quinoa and Black Beans.

I make this about once or twice a month and freeze the slices. Then I just pull them out to take to work as a snack. It's about the best tasting healthy recipe I have.

Healthy Whole-Grain Banana Bread

Ingredients:
3/4 cup Splenda sugar blend for baking
3/4 cup flaxseed meal
5 ripe bananas, mashed
1/4 skim milk
1/4 low-fat sour cream
2 egg whites
2 cups whole wheat flour
1 tsp baking soda
1/2 tsp salt

Preheat oven to 350*. Grease a 9x5" loaf pan. In a medium bowl, mix together Splenda, flaxseed meal, bananas, milk, sour cream and egg whites until well blended. In another bowl, combine flour, baking soda and salt. Stir into the banana mixture until moistened. Spoon into prepared loaf pan.

Bake for 1 hour and 10 minutes or until a toothpick inserted comes out clean.

Nutrients per slice (loaf cut into 10 slices)

213 calories
5g fat
38g carbs
8g fiber
7g protein

I like to do that with regular potatoes. I've had sweet potato fries at restaurants but, meh. Now I think I can bake them at home for a better savory-ness. :1thumbup: Because I am noob, what temperature and for how long (generally)?

I am going to make this tommorrow night, except I will cut down on the oil and not use nearly that much soy sauce (which I will also used reduced sodium). And I was going to throw in some grilled chicken too.

This weekend I plan on making Macaroni and 4 Cheeses. I highly doubt I can find the frozen winter squash so if not I will either bake some fresh or puree some cauliflower.

I'm also going to make some of these Triple Chocolate Cookies but I might use all whole wheat flour instead of half.

If you can get your mitts on whole wheat pastry flour, it's a perfect replacement for white flour in baked goods. It's lighter and finer that whole wheat flour, so you don't have to worry that stuff will come out heavy.

It's tough to find around here. I couldn't even find white pastry flour at the store today.

I have tried substituting half of white flour for regular whole wheat quite a bit when I bake and I've had good success with that.

Barley flakes? That is so cool!

I gotta say I'm having fun trying these new ingredients. Quinoa, bulgar, it's like a whole new world! Barley and wheat berries are on my list to try next.

Oh wait, whole wheat pasty flour is just graham flour? I feel silly now because they did have whole wheat graham flour at the store. :dopey:

Found this article this morning. I'm digging some of the ideas for a twist on my usual breakfast but I'd probably tweak their ideas a bit.

I made the mac and cheese tonight. I couldn't find squash just as I suspected so I pureed some cauliflower instead. I also put a bit more cheddar cheese in. It turned out really well. It's definitely not the old mac and cheese but it's a good subsitute for when you're trying to eat healthy.

I made these Blueberry-Ricotta Pancakes with Chunky Blueberry Sauce. It was so good I think I'm going to make it for my mom and dad the next time I go home.

For dinner I have a whole cut up chicken that I got from a local farmer in the freezer. I think I'll roast it in the oven with a little garlic and olive oil and remove the skin after cooking.

Hey bcg, how do you make your baked sweet potato fries? I experimented with making baked sp chips today. All five batches failed spectacularly one way or another, but the handful of chips from each that didn't suck were damn good. I wanna try fries next.

Just chop them up, sprinkle them with some salt and pepper and just a touch of olive oil and bake. Hmm, I bake them probably at 400 or so for 30 min? You might want to flip them to get them to crisp nicely.

How are you doing the baked chips? I have had success making plain potato chips in the microwave before. I spray a plate with cooking spray, and use a peeler to make super thin slices of potato and then lay overlapping on the plate. I microwave until it starts crisping and gets a hint of light brown and then flip it over and microwave again. I know the cooking spray isn't exactly healthy but I figured it's better than a regular fried potato chip.
