Default Soylent Green! Fake Meat!

OK, not so much soylent green. But I did just make seitan today, for the first time, using this recipe. Spicy Italian Vegetarian Sausage. It was as easy as the video. It's now in the fridge firming up a bit.

I get a craving every now and then for sausage McMuffin with egg, but I know it's very bad for me, as much of McDonald's stuff is. So I make my own with Morningstar sausage, real cheese, and real eggs. And a lot less grease. But Morningstar sausage is sort of tiny, and I'm looking for a larger meat patty for my muffin. Hoping this stuff fits the bill.

I'll post a photo when I prep it to eat.



And here's what I would do differently next time: Crush the fennel. Cook in pre-made patties, rather than large log I have to cut up.

Don't fry this stuff, bake it, or sauté it. I've tried frying and baking, and while both are excellent, baking is better for you.

What is Bills Best Chik’Nish Seasoning? It bugs me when recipes call for branded mixes of spices. Just give me the list of whatever the hell is in there, dammit.

I have no idea what it is, I used two chicken bullion cubes dissolved in the water part of the ingredients. And no added salt.

It is, btw, just as yummy as they say.

You know, I always thought there was a difference between patty and sausage*, but Watser? has me confused. And Joe is just a miscreant.

*firm, warm, large, long. mmmmm...sausage......

I make my own McMuffins too but I recently discovered that Morningstar veggie patties have eggs in them so I decided to stop using them. I eat eggs but I prefer to know where they come from. I might have to give this a try!

If you watch the video, it really is that easy. And she says change the spices to get different types of sausage. Also, it's important to wrap in in foil, to get that firm texture that meat has, considering this comes from a wheat product. The gluten expands against the foil wrap as it's steamed, then has no place to go further, so the holes and texture associated with bread have no place to develop.
