Make my meal
Okay, I am going to list some ingredients I have around (and want to use up) and you post a way to make a meal or dish out of them. We can use this thread to come up with creative ways to use leftovers
I have
Leftover roasted chicken
Brown rice
Chicken stock (from the carcass)
Carrots
Apples
Cantaloupe
Onion
Garlic
Homemade mayo
Masa Harina
Self rising flour
Garbanzo Beans (dried)
Black eyed peas (dried)
Several varieties of dried pasta
Cabbage
A few basic spices

Nope, I have half a fresh head left
The other night I made corned beef and cabbage, then I chopped up the remaining veggies and leftover beef, returned it to the stock, added some garlic and ate it as a soup with homemade soda bread. It was great.

How about a cabbage salad with roast chicken and a balsamic, garlic vinaigrette? Slice the cabbage thin, shred some carrots, add some onions if you like, top with the leftover chicken. Mince 2 cloves of garlic and whisk (or shake in a clean jar) 2 tablespoons balsamic with 1/4 cup olive oil and 1/4 teaspoon salt. Dress and toss. Gnosh.
If you want to cut back on the oil and get a bit of a chicken boost, cook down a small amount (like 1/3 cup, maybe) of the chicken stock by half, let it cool, then use it to replace that much of the oil. It's actually a great way to bring out the flavor in any chicken salad.

I am a total kitchen failure. I get inspired everynow and again, but not often. I wish I would take more interest, maybe because I love to eat and if I go out I only have to think about one serving not make several servings at a time. I kind have this thing in my mind about leftovers right now. Don't care for them at all. The food has to be fresh.

Yeah, I am trying to stretch everything to help with my budget. Usually I save leftovers only to throw them out at the end of the week because we wouldn't eat them.
Not very economical to throw 2+ servings of food in the trash.

I've found that most leftovers convert excellently into salads, soups or sauces. I pretty much cook something new every night, but I reuse any leftovers in the prep so the food doesn't go to waste but it doesn't feel like I'm heating up some old pile of glurge.
The trick to making it feel like a different meal is to alter the base. So, for example from the OP, your roast chicken dinner will become a cabbage salad topped with chicken. If you were to make the cabbage salad from scratch, you'd be roasting the chicken anyway. It's not like you're going to make a lovely raw chicken caesar, right?
So the cooked chicken isn't a leftover; it's just an ingredient in your next meal. Same goes for everything else.

Which is exactly what I need. reheating the same meal over and over would get tedious. Doing something totally different keeps things interesting.
BTW I roasted 2 small chickens (stuffed with apples, really yummy). We are having roasted chicken again tonight....not leftovers but a whole new chicken
I actually froze the leftover meat from last nights for some future dish, and will make the salad tomorrow from tonight's leftovers.

take the masa harina, make tortillas.
Take the chicken, the rice, the garlic, apples and carrots and use as filling. (Cook the carrots and apples, of course)
Cabbage and carrots also make a good salad.(throw in fennel seeds, and use a vinaigrette, if you can)

Made this tonight. I loved it. It was a little light for hubby, who is such a steak and potato and 2 sides kinda guy, but he enjoyed it too. Kiddo was not a fan though. I rarely or only lightly season his foods, so I think it was a bit strong for him with the balsamic and raw garlic.

When I have leftover chicken, and sometimes when I don't and cook fresh, I make chicken and cabbage soup. Basically, I would saute some onion and carrot and garlic in a little oil, add the chicken broth/water, add the cabbage, add the chicken, and maybe some leftover rice. We usually put red pepper flakes or siracha in our chicken + cabbage soup, because we like things spicy.
Or, if you have some fat, like shortening or butter or lard (whatever), you could make dumplings and simmer them in the chicken broth and serve over the chicken. Then veggies on the side.
You could make black-eyed peas and rice, kind of like beans and rice. You might need a piece of pork to make it really good (IMSouthernO).

I was about to throw away like 5 almost black bananas last night, then remembered my new Great Depression non wasteful attitude and made banana bread
So, make my meal tonight. What can I do with leftover pot roast besides sandwiches?
