Default Eggs for dinner

So, my friend just told me that the farm up the road sells eggs for 1.50/dozen. That's as cheap as the supermarket and they're farm fresh and organic (at the produce stands and farmer's markets they want 3.00/dozen for "yard eggs"). Hubby plans to stop there after work (though apparently our recent heatwave caused some chickens to stop laying, so unsure if they'll have any)

I would like to use eggs as a dinner protein a couple times a week maybe, to help with our food budget.

Any recipes? Keep in mind I do not keep fancy spices or ingredients lying around, though I have basics like onions, garlic, olive oil etc.

Basically, I agree, but I'd omelet it, myself.

My circadian rhythms and day schedule has been off kilter for some years now and I've ceased caring what meal is what.

Plus, I love fried eggs with toast and jam, but my diet denies it on a regular basis (and I have no shortage thereof!). My recent cholesterol numbers tells me that my current level of egg consumption is not an issue. Yeah!

I vote frittata too. It is pretty much like an omelet, except you cook it in the oven so the texture's different, and you don't fold it. I always sprinkle paprika on the top just for pretties.

And you can put pretty much whatever you have lying around in it. Leftover meats, vegetables, cheese, whatever.

Frittata's are great, but I have to vote for..... scramble! Faster, and you can throw whatever in just the same - meats, veggies, odds and ends. For best results, start with the eggs, add other ingredients and then add the cheese at the very last minute or even after you've turned the heat off.

I cook frittata on the stovetop until it sets, then pop it under the broiler to cook the top until it's browned and bubbly. It is the only dish I know that works perfectly at every temperature. It's delicious hot, delicious warm, delicious tepid, and damn delicious cold.

You can eat it as an entree for dinner then in a sammich the next day for lunch. It's not sloppy seconds, either. Bars in Italy do a brisk business selling frittata sandwiches.

Other favorites that work for non-breakfast include omelets, quiche, spaghetti alla carbonara, egg salad, egg drop soup or its Italian equivalent, stracciatella, and of course, the crack of the culinary universe, deviled eggs.

I'm a big fan of "breakfast" tacos; don't see why they couldn't be dinner tacos.

I just scramble a couple eggs with a broken up Morningstar™ sausage pattie and hot sauce, top with salsa and roll in corn tortillas.

When I'm particularly lazy I just tear up the corn tortillas and mix them in the scramble.

The first time you use farm fresh eggs, you should just do a simple scramble so you can have the pleasure of tasting the difference between them and store-bought.

After that I vote frittata because you can do so much with them.

Scrambled eggs with fresh chanterelle mushrooms is heavenly.
