7 years ago I picked up used a oak cask from one of the wineries in BC. shortly there after i started the slow process of making home made vinegar from a mix of a home brewed malt liquor,and a fruit cider(apple rasberry)
the initial brewing took 3 months, the acidification process about another year. the filtered vinegar has now been sitting in an oak cask in my parents basement cold room for over 5 years.
Im`now half thinking about about cracking this barrel open to see whats in it... the other half still wants to wait untill its 10 year old...
