There is little doubt that creationists have this sort of mentality. AiG's statement of faith includes, By definition, no apparent, perceived or claimed evidence in any field, including history and chronology, can be valid if it contradicts the Scriptural record. Of primary importance is the fact that evidence is always subject to interpretation by fallible people who do not possess all information.
Still, I have found no evidence that Morris truly said that. There are no specific citations. The highly dubious picture puts further doubt on it.
So, I'd say the answer to your question is "no."

Yeah, I found it all over the Internet--always on atheism-themed websites and never containing citation other than "Henry Morris (Institute for Creation Research)" and "Quotes from the The American Taliban." I often fact-check supposed quotes like these. Usually they are atheist/evolutionist quotes asserted by Christians. Whenever I see that sort of pattern on Google, I conclude that the quote is BS.

That kind of specific citation is what we need to confirm the "misinterpreted its data" quote. To prove that it is the sort of thing Morris would say is not enough. I have learned that atheists are more likely to be honest and skeptical than everyone else only to a limited extent, and their claims must be doubted just like everyone else's.

I've read that website. I still find the claim dubious, in that: - Sherman was apparently the only journalist at the news conference who heard him utter those words.
- The only news source that published those words is Sherman's own website. I tend to look for a more reputable journal of information than Liberal News when looking for confirmation of something a Bush said.
- Sherman created the transcript himself. Putting fancy numbers by it and storing it in a library does not change that.
Sorry, this is me being skeptical. It's what I do. While I will grant that a credentialed journalist is probably more likely to be honest than a Bush is unlikely to say something stupid and offensive, I am still going to have to suspend judgement at this time.

I don't doubt the interview by Robert I. Sherman. He was a fully-accredited reporter. If it were made up, his reputation would be shot to Hell by a denial from a Bush spokesperson.

I have no doubt Morris believes that quote, but I agree that he may not have said those specific words.
Bush, this page ( http://www.skeptictank.org/gbush.htm) gives some info, although it doesn't give any more support for that specific quote, it does support the attitude.
"C. Boyden Gray, counsel to the president, reply on White House stationery on February 21, 1989, stating that substantively Bush stood by his original statement.
"As you are aware, the President is a religious man who neither supports atheism nor believes that atheism should be unnecessarily encouraged or supported by the government."
That site was funny, but they really really really should have cited sources.

The reason I went to the trouble of looking for substantiation is this very thing, I have a distinct memory of hearing Bush say that. Memory is a funny thing, I normally have a very accurate memory, but I'd guess that my mind is just as capable of creating a false memory as anyone's.

I don't think that's Henry M. Morris, founder of the Institute for Creation Research.
Maybe it's some other "Henry Morris"?
It might be John Morris, Henry's son and current head of the ICR, but it doesn't look quite right.
