Ice cream maker recipes
My parents recently acquired an ice cream maker (for $30 on sale!) and so I want ice cream recipes.
Also I need to figure out, definitively, what is supposed to go into gelato. Because recipes online are very varied. I'm certain that there should be more milk than cream, as it has a lower fat content than American ice cream, but I'm not sure whether it should have no cream, or a little cream, egg yolks or no eggs, etc. I've even seen sorbet labeled as gelato online, but I know that's wrong.
The recipe book my parents bought has milk and egg yolks, so I'm inclined to trust that.
So far we've made
vanilla ice cream, which was meh, nothing special (may have been the vanilla extract's fault)
blueberry-lemon-sour cream ice cream, which was alright
chocolate orange, which was just the chocolate recipe that came with the machine but with orange extract and zest, which was delicious
and
strawberry, which was good, but not better than what's available at the store. But strawberries aren't in season, so that's probably why.
Another idea I had was honeydew with coconut milk, but that would require honeydews to be in season.

Re: Ice cream maker recipes
You might want to try cinnamon. Use a good boiled custard recipe for the base and add some quality vanilla extract and a teaspoon or two of cinnamon. Once the ice cream is done, serve it with a drizzle of chocolate syrup.
Banana ice cream with blueberries can be a perfect match. Once the Banana ice cream is done, gently fold in some blueberries, pack the ice cream into a container, and freeze for a couple of hours.

Re: Ice cream maker recipes
Some other thoughts...
Green Tea
Ginger
Hazelnut Chocolate
Pumpkin Spice
And for something completely different...
Balsamic Ice Cream
Ingredients:
8 egg yolks
1 cup sugar
2 cups heavy cream
2 cups milk
1 vanilla bean, scraped
3 tablespoons balsamic vinegar
Directions:
In a medium stainless steel bowl add egg yolks and sugar and whisk until pale in color. In a large pot or saucepan bring cream, milk, and vanilla bean to a boil. Slowly add the hot milk and cream to the egg mixture, whisking constantly. Add balsamic vinegar and chill. Once mixture is cold, run in ice cream machine in accordance with manufacturer's instructions and reserve.
Serve this ice cream with an after dinner cheese course.

Re: Ice cream maker recipes
Oh. My. God. I want an icecream maker just for that balsamic ice cream recipe. No joke, when I have a sweet tooth at midnight, tomatos and balsamic fix me up. Or a reduction with strawberries and some Greek yogurt.
IIRC Biochemgirl posted recipes when she was doing some kinda icecream version of you got served. Can't find the thread though.

Re: Ice cream maker recipes
I've gotten good results with cinnamon by heating the milk and cinnamon sticks and then steeping it for about an hour before making the custard. I make pistachio every year for by birthday by adapting the hazelnut recipe that came with my first ice cream maker. It causes problems now because the new maker has a smaller capacity and sometimes I forget to cut the recipe down.
Just read the pistachio recipe above and I think I'll try that this year. It sounds even better than the one I use. One thing I do is buy a little dram of pistachio flavoring to use instead of the almond extract. It really beefs up the flavor. Now I can hardly wait the three weeks until my birthday dessert of my ice cream and my mom's cherry pie.

Re: Ice cream maker recipes
Easy, very low-carb recipe, if you don't mind rock-hard ice cream best stored in individual serving containers that, if you don't eat freshly made, you (i) nuke for 30 seconds before eating, or (ii) let thaw in the fridge for several hours, then eat as a mousse (automatic portion control!):
1 liter coconut cream (easy to find if you have an Asian market nearby, like 99 Ranch)
a few eggs
unsweetened cocoa powder to taste (half-cup or so)
sweetener to taste (we use stevia extract from Trader Joe's)
Then you can add anything else you like (cinnamon, pumpkin pie spices, etc.--dump the cocoa, and use a can of unsweetened pumpkin--or a cup or two of fresh cooked pumpkin--and the pumpkin pie spices, and you get pumpkin ice cream)
Refrigerating the mix before using it may shorten the freezing time, but a lot of times our just sets up, like mousse, in the fridge. That's good, too.

And we'll be over for dessert.

Re: Ice cream maker recipes
Oh yeah, I made a white chocolate peppermint ice cream too. I added too much white chocolate, but fortunately we had some peppermint extract handy to kick up the peppermint flavor at the last minute.
But I used buttermints, which I think negatively affected the ice cream's texture. It had a strange mouthfeel. It was still decent though. I dunno if it was the buttermints or the white chocolate, but it ended up being a very soft ice cream even after being in the freezer a while, although that didn't bother me.
I think I'd maybe use buttermints for the peppermint chunks, but it would definitely be better to use the candy cane type for the actual flavoring.
