Well, I'm sure she's aware that she can simply scramble or fry the eggs, if she wants to do something simple.
She wanted suggestions of other dishes that feature eggs...
Of course, a Spanish tortilla isn't that different from a frittata, the main difference being that it should have potatoes and onions in it (and optionally other things), and you flip it in the pan rather than broil the top. Also commonly served cold.
