I'm guessing that most of the people who have made suggestion don't actually like the taste of eggs.
It looks like everyone is doing everything possible to completely cover up the eggs.

Well, I'm sure she's aware that she can simply scramble or fry the eggs, if she wants to do something simple.
She wanted suggestions of other dishes that feature eggs...
Of course, a Spanish tortilla isn't that different from a frittata, the main difference being that it should have potatoes and onions in it (and optionally other things), and you flip it in the pan rather than broil the top. Also commonly served cold.

Last night I was watching Diners, Drive-Ins & Dives and one of the places offered some really interesting omelets, including one with hot Italian sausage, mozzarella cheese & marinara sauce.

Toasted, buttered, english muffin, a poached egg, ham or bacon (I used bacon this time) & sharp cheddar cheese.

Glorious poached eggs on toasted English muffins with a grilled slice of ham...all slathered in Hollandaise sauce.
The best part is when the yolk flows out over the plate after being pierced.

A soft poach but not runny, widget doesn't like runny eggs.

well you got your standard keishs and what not, but i enjoy a good egg drop soup now and then. its a quick soup to make but some what dificult to make half decently....on the upside, even if you screw up the egg drop part it still tastes good
start
4 cup of chicken soup stock
1 tble sppon corn starch
3 diced green onions or chives
1/2 teaspoon grated ginger
3/4 cup straw and or or shitaki mushrooms
1 table spoon soy sauce
1/2 teapsoon white pepper
eggs- 2 whole eggs and one yolk, well beaten
bring the soup stock up to a light boil then mix the starch fisrt and then the other engredients
after cooking for ten minute take the soup off the heat. now with out stiring slowing dribble the egg over the soup, wait for it harden then stir. then dribble more egg over the soup wait for it to harden then stir....continue untill out of egg. your then ready to serve.

I had some leftover chicken, so boiled and chopped one of the eggs, used another to make homemade mayo, chopped some pickles, mixed it all up and ate it on top of the loaf of bread I had just made.

I like the taste of eggs. But, I am trying to replace two dinner proteins per week. I think we would get sick of plain eggs twice a week, so the recipes are to add variety, as well as add heartiness with additional ingredients.

I also try to trim the budget by having eggs for dinner. It is also in my book- comfort food. It is a must for Wednesday nights. Fritatas have been mentioned already, there are lots of great recipes and are a great way to recycle leftovers from other meals. Even more economy! Had fajitas? Throw in the peppers and onions! Had roasted potatoes or veggies? Throw them in, or toss them in your lunch salad cold which I like. Unlike a quiche there is no shell and they are easy peasy.
For my favorite eggs for supper dish- I like to poach a couple eggs in red wine, and serve them on a slice of crusty bread- buttered and toasted with a slice of nice cheese in between. Around the plate put baby spinach, roasted red potatoes, and possibly green beans or even peppers. Grilled red onion can be added too if you are of the mind. Then serve with a warm bacon dressing and lardons. It is really good. Technically the bacon counts as meat, but it is a tried and true paring. Both the dressing from the bottom and the yolk from the top soak into the bread, and it is divine! This is my salad I invented with which I hope to put caesar out of business.
Another great trick that I have found is to get country ham, you know, procuitto or serrano hams, sliced EXTREMELY thin- tissue paper thin. I have a guy that does it how I like. Tricks the hubby into thinking he has had meat when he really hasn't. A half pound can last forever if you use half an oz per serving. Serrano is cheaper than the others in my neck of the woods. At 8 bucks for a half pound it can go a loooong way. I make a number of happy painini soup/salad combos and he always leaves the table stuffed. And he is six and a half feet of walking metabolism.
I combined this idea with the eggs to make the following:
One fried or poached egg is placed on a slice of country ham which is placed on a slice of cheese which is placed on a toasted piece of bread. Serve with sliced tomatoes and basil. Add crack black pepper and sea salt over all. It is so satisfying the portion is more than enough.
And yes breakfast tacos are great for supper. Been there done that got the kiss for the cook.
Baked egg dishes are another way to go, I have a stack of recipes that I haven't tried since I don't have an oven, but I so want to try out.
